π Ingredients (Serves 3β4)
For the Fried Chicken:
β’ 300g boneless chicken thighs or breast, cut into bite-sized chunks
β’ 1 tbsp Kashmiri chili powder
β’ 1 tsp lemon juice
β’ 1 tsp garlic ginger paste
β’ 1 tsp coriander powder and food Color a pinch (optional)
β’ 1 tsp turmeric powder
β’ 2 tbsp cornflour
β’ 1 egg
β’ Salt to taste
β’ Oil, for deep frying
For the Fried Rice:
β’ 3 cups cooked rice (preferably cold/day-old)
β’ 2 eggs, lightly beaten
β’ 7-8 garlic cloves, finely chopped
β’ Β½ cup mixed veggies (carrots, cabbage, bell pepper)
β’ 2 tbsp soy sauce
β’ 1 tsp chilli powder
β’ 1 tsp chili sauce (optional)
β’ 1 tsp sesame oil or vegetable oil
β’ Salt & pepper to taste
β’ Spring onion greens, chopped (for garnish)

π³ Instructions
1. Marinate & Fry the Chicken
β’ Mix chicken with soy sauce, lemon juice, garlic ginger paste, chili powder, coriander, turmeric powder and salt. Let it sit for 15β30 minutes.
β’ Coat marinated chicken with cornflour and eggs.
β’ Heat oil in a pan. Deep-fry or shallow-fry chicken until golden and crispy. Set aside on a paper towel. cut them into smaller pieces m.
2. Make the Fried Rice
β’ In a large wok, heat 1 tbsp oil. a
Add garlic, green chillies, white part of spring onions and mix well, add the veggies and add the eggs.
add the chicken pieces and rice.
β’ Add soy sauce, chili powder, sesame oil, and season with salt & pepper.
- Add cooked rice. Break up any clumps and mix well.
β’ Lastly, drizzle some sesame oil. Stir-fry everything on high heat for 1β2 minutes.
3. Garnish & Serve
β’ Garnish with chopped spring onion greens. Serve hot with extra chili sauce or a fried egg on top.
