Corn Dum Masala-3Corn & Paneer (Indian cottage cheese) are simmered (dum cooked) in spicy gravy. I really loved it!

I always used to do this with sweet corn only and this time I did with paneer and it was too good. I had it with roti and rice. You can always replace paneer with tofu or even skin paneer and replace with corn only.

I recently made paneer dum mirch, which was again similar recipe, which was simmered for 20 minutes in low heat, and everyone who tried it said it was really good.

So, I wanted to share this recipe. I notice that lot of people are working from home and have some time to cook now which is a good thing for health and saves some money too. Also, cooking is a great stress buster.

Ingredients
  • • • Oil – 2 tbsp
  • • • Cumin seeds – 1 tsp
  • • • Onion – 1 cup, finely chopped
  • • • Garlic – 5, chopped roughly
  • • • Ginger – 2 inch, chopped roughly
  • • • Green Chilli – 3, finely chopped
  • • • Bell Pepper - ½ cup, chopped
  • • • Tomatoes/ tomatoes paste – ½ cup, finely chopped
  • • • Turmeric – ½ tsp
  • • • Coriander powder – 1 tsp
  • • • Garam masala – 1 tsp
  • • • Black pepper powder – 1 tsp
  • • • Kashmiri chilli powder – 2 tsp
  • • • Amchur powder - ½ tsp
  • • • Corn – 1.5 cups
  • • • Paneer – 1 cup, made to crumbles in blender or in hand.
  • • • Salt – ½ tsp
  • • • Water – 1 cup
  • • • Sugar – ¼ tsp
  • • • Kasoori methi (fenugreek leaves dried)– 1 tbsp, crushed
  • • • Cilantro – 1 tbsp, finely chopped
  • • • Lemon Juice – 1 tsp to garnish
Instructions
  1. Add oil in a pan on medium heat and once oil is heated add the cumin seeds.
  2. When it turns brown, add finely chopped onions, garlic, salt, Green chilli and ginger. Once the onions turn brown, add the bell pepper for a minute.



  3. Then add the chopped tomatoes/tomato paste with coriander powder, turmeric powder, chilli powder, black pepper powder, garam masala, amchur powder, and salt.



  4. Now add the corn, paneer, sugar, water and keep it in dum.





  5. DUM:
  6. Seal the pan with foil, put a lid on top with something heavy on top and a pan on the bottom.

  7. Reduce flame to low and let it simmer for 20 minutes.

  8. Now open it and check salt (add salt if you need more). Add kasoori methi, chopped coriander leaves and lemon juice to garnish.

CornCapsicumPulao-7Corn Capsicum pulao is a simple, elegant and flavorful one pot meal recipe. It is aromatic. You can use fresh sweet corn or frozen sweet corn for this. But I feel frozen corn is losing its flavor and taste over a period of time. It is a quick one pot meal and perfect to use any left over rice. For variation, I have added capsicum in this pulao. I made this last week for my friend’s birthday lunch. Any gravy recipe is fine to go with this. I made it with paneer Masala. It is great for kid’s lunch box. When you have some potluck get together or party, it is the best option to do this.

When I was in India, when we first got the electric cooker in Madurai, we started doing the pulao at home. Every Sunday my dad and mom used to prepare this pulao at home. They used to make it as vegetable pulao. I am just making it as sweet corn pulao. So Sunday and pulao makes me really nostalgic. I usually make peas pulao, sweet corn pulao, capsicum pulao, Channa pulao, spinach pulao, aloo pulao, gobi pulao. This time I made corn capsicum pulao.

Vegan note: replace ghee with oil.

Sweet corn Bell pepper Pulav

Ingredients
  • • Basmati rice – 1.5 cups
  • • Sweet corn - 1 cup, fresh or frozen
  • • Cardamom – 2
  • • Cloves – 2-3
  • • Bay leaf – 1
  • • Cumin seeds – 1 tsp
  • • Ginger garlic paste – 2 tsp
  • • Green chillies – 2 , slit
  • • Mint – 2 tbsp, chopped
  • • Coriander – 2 tbsp, chopped
  • • Pulao masala powder – 2tsp or (Chilli powder – 1 tsp, garam masala powder – ½ tsp and coriander powder – 1 tsp)
  • • Yogurt – 1 tbsp
  • • Capsicum – 1 , diced
  • • Onion – ½ cup, thinly sliced
  • • Salt – 1 tbsp
  • • Ghee/oil – 2-3 tbsp (preferably 2 tbsp ghee and 1 tbsp oil)
Instructions
  1. Wash the basmati rice and soak the rice for 30 minutes. Drain and keep aside.
  2. Heat oil or ghee or both mixed in a pot /pan and crackle the cumin first. Then add the whole spices ( bay leaf, cloves and cardamom).
  3. Fry till the spices release their aroma and then add the sliced onions and slit chillies. Stir and fry till the onions are golden or caramelized. Then Add the ginger garlic paste, mint and coriander leaves and fry for a minute.
  4. Add the capsicum, sauté for a minute and then add sweet corn, pulao powder or (chilli powder , garam masala powder and coriander powder )
  5. Mix and Saute for 2-3 minutes. Add the yogurt , mix well and switch off.
  6. Take an electric cooker, add the drained basmati rice, add the sauted capsicum corn masala , salt and add required amount of water. ( for 1.5 cups , I added 2.75 cups water)
  7. Check for salt at this time. It should be little salty.
  8. Close the electric cooker, switch on and it will switch off when it is done.
  9. If you are cooking in pan, just add the rice and water to the masala. Cover the pot tightly with a lid and cook the rice till all the water is absorbed. Cook in medium for 15 minutes and slow for 10 minutes. Switch off.
  10. Fluff the rice and serve with onion tomato raita or some paneer gravy.
Notes
1. Make sure to soak rice for atleast 30 minutes.
2. You can even add cashews to it.

Another quick 10 minute sandwich for breakfast 🙂 . Do not skip breakfast!

You think you don’t have enough time to make Breakfast? Most of our mornings goes by rushing that we tend to skip Breakfast.



This is one of my favorite sandwiches and I made a mini one with it. My sister loves paneer and I made this for her :)! Easy, quick and tasty one. Takes about 10 minutes to get ready and are super fresh and delicious. Bored with your toast? Spread this delicious homemade paneer tofu mix sauce on your bread and enjoy! This bread toast is easy to fix up with less effort for kids. You can sandwich them between tortilla or roti/naan .

You can even make this as full sandwich rather than mini sandwiches. We can even have this as an appetizer, snack, pot luck party dish. Sanwiches always in my favorite food list for my mornings. If I am bored with oats, I just go and make my own spread sandwich :)!

Mini Paneer/Tofu Corn Sandwich

Ingredients
  • Paneer/ Firm tofu – ½ cup crumbled
  • Corn (frozen) – ¼ cup
  • Big onion – ½ finely chopped
  • Ginger Garlic paste – ½ tsp
  • Green chilli – 1, finely chopped
  • Capsicum/ Bell Pepper – 2 tbsp, finely chopped
  • Tomato ketchup – 2 tsp
  • Red chilli powder – ½ tsp
  • Chaat masala – 1 tsp
  • Garam Masala Powder – ¼ tsp
  • Coriander leaves – 1 tbsp finely chopped
  • Salt – to taste
  • Oil – 2 tsp
Instructions
  1. Heat oil in a pan; add onions, green chilli, ginger garlic paste and sauté till golden brown.
  2. Add capsicum and sauté for a minute, then add chilli powder, garam masala powder, tomato sauce and salt. I would give a quick stir, it should not be too dry or too saucy.

  3. Then add corn and paneer/tofu crumble. Mix well.
  4. Cook for a minute, garnish with coriander leaves and switch off.

  5. Toast the bread (with little butter or plain) on both sides. Chop the sides, cut them into mini sizes, Spread the filling on the top side, chop and squeeze some lime juice to garnish. Close the sandwich and fix a tooth pick to it.
Notes
1. I used frozen corn, you can use fresh corn , boil for few minutes, dry and keep it.
2. Replace corn with any veggies like peas or carrot.

Baby Corn Makhani

Baby Corn Makhani is a great side dish for rotis and mild pulao or jeera rice. Baby corn is a wonderful crunchy vegetable and easily gets blended with any masala. I usually make baby corn Manchurian or baby corn fry. But this time I wanted to make baby corn gravy with no frying.  Makhani gravy is usally made up of pureed tomatoes, ginger, garlic, red chilli powder and cream.

I made this with a simple roti, jeera rice and cucumber raita. Generally, baby corn is cooked or par boiled before using in any dish. But I used a can one, eve n otherwise I just wash and cook it without boiling. That crunchy texture gives great taste to the dish. If you prefer your baby corn more cooked and softer, I’d recommend cooking it in a pot of boiling water until soft before adding to the gravy.

I usually love baby corn in my pizza. And baby corn is a good source of folate or folic acid. It is rich in proteins, vitamins and iron. I used to make baby corn capsicum masala or baby corn peas masala. But after doing my paneer makhanwala, I got inspired and did this recipe.

You can always taste the ingredients a bit if you don’t have that specific ingredient at home. You can do this recipe with tofu,chicken,potato instead of baby corn. Never be afraid to try new flavors in your cooking. I always believe in that.

Vegan Note: Avoid cream and butter. 🙂 we have cashew paste inside already.

Ingredients
  • For the gravy:
  • Onion - 1 Chopped
  • Tomato - 2 Chopped
  • Garlic - 5 Chopped
  • Ginger - ½ inch Chopped
  • Cinnamon - 1
  • Cardomon - 2 whole
  • Cashews - 7 whole
  • Almond - 7 whole
  • Jeera - 1 Tbsp
  • Salt - As needed
  • Water - 2 cups

    [other]
  • Unsalted Butter - 2 Tbsp
  • Baby corn – 10 , slit.
  • Chilli Powder - 1 Tbsp
  • Green Chilli - 1 Slit
  • Kasturi Methi - 1 tbsp
  • Garam Masala Powder - 1 tsp
  • Sugar - ½ tsp
  • Water - 1½ cups
  • Cream - 1 tbsp

    [Garnish]
  • Coriander - 1 tbsp, chopped finely
  • Cream - 1 Tbsp
  • Salt - As needed
Instructions
  1. Mix the chopped onions, tomatoes, cashews, almonds, garlic, ginger, cinnamon, cardomon, jeera, salt and water in a pan.
  2. Cook for about 15- 20 minutes on a medium flame till everything gets cooked. Allow this to cool.
  3. Then add everything in a blender. Blend them into a smooth paste with not even small pieces of cashews on it.
  4. Heat butter in the same pan.
  5. Add the jeera, blended makhani paste and stir well.
  6. Add chilli powder. (If you want rich color, you can add kashmiri chilli powder. I used normal one)
  7. Stir well &sauté the masala on a medium flame till the butter ooze out. It has to be sautéed really well till butter ooze out.
  8. Add washed baby corn, methi leaves, chilli powder,cream,water and boil for ten minutes.
  9. Switch off the flame. Garnish with coriander, ginger and cream.
Notes
1. You can use julienne ginger to garnish as well.
2. Close the lid when you add baby corn and water at the end as it will splash out some gravy outside as it boils.
3. You can also fry baby corn in butter/oil before you add them.
