Seedai-7Crispy curry leaves flavoured nuggets – A perfect snack to have while sipping a cup of hot chai.

Hello all , It’s Janmashtami/ Krishna Jayanthi on Saturday 5, September 2015. It’s the birthday of the Lord Krishna. I have a collection of festival recipes like uppu seedai, murukku, aval payasam, ladoos and so on, you could check it for more. But the main savory we do for this festival is the “Uppu seedai/sweet seedai”. I am going to uncover my own version of a revised “uppu seedai” recipe today here. I like savory more than sweet after coming to Canada. When it comes to seedai there are chances that it would burst out easily. I am not trying to scare you, but be careful when you do this. May be in older days they used to have lot of stones in the rice which made it burst. These days its loads better and also if you sieve it well, it should be very fine  I have made spicy curry leaves murukku before for last year Diwali and it was the best in the whole recipes I made. So, I wanted to share this with you all 🙂

The correct way to do this recipe is to soak one cup of raw rice in water for two hours, dry them completely by placing on a cloth/paper and grind them. I used the ready-made rice flour instead. It was equally good. I have no complaints. Let me know someone if you get to know the reason why we need to do the former method.

Spicy Curry leaves seedai / Crunchy Lentil Nuggets

Serves: 2 cups
 
Ingredients
  • • Rice flour – 1 cup
  • • Urad dal – ¼ cup
  • • Sesame seeds – 1tbsp
  • • Ajwain – 1 tsp
  • • Jeera/Cumin – 1tsp
  • • Salt – as needed.( I used 1 tbsp)
  • • Ghee – 1 tbsp
  • • Grated Coconut – 2 tbsp
  • • Oil – to fry.

    To grind:
  • • Curry Leaves - 15
  • • Red chilli - 4
  • • Garlic - 3
  • • Ginger - 1 inch
Instructions
  1. Blend everything under to grind. And keep aside.
  2. Fry the urad dal for 2 – 3 mins. Grind the urad dal very finely. Mix rice flour and urad dal powder together, Sieve them twice.

  3. Mix the ajwain, coconut, jeera, ghee, blended curry leaves & red chilli mixture and salt to the flour mixture.
  4. Add water little by little to form soft dough but do not make it watery/sticky.

  5. Now comes the major step, hold a little dough part on your left hand on the fingers side like shown below. Take a tiny dough part, press them and release them by making anticlockwise directions on the right hand. And the first seedai dough is ready. It should not be hard or very soft. It should be in perfect texture.

  6. Make them all like the above step.
  7. Fry them in hot oil and take them out when it’s in golden color.
Notes
. Try to be careful when you put them in oil, it might easily burst. So, sieve it properly to avoid stones.
2. When you make the balls, make sure it’s not very hard or very soft. It will either break or it will be too hard.
3. Use unsalted butter instead of ghee or if you using ghee adjust your salt accordingly as ghee would have salt.
4. If you think the dough is too hard, add little ghee and water. Very little would be good.
5. Oil should be very hot, or else it will break.
6. Roast the urad dal just for few minutes, which should do the job.
7. Try to use whole urad dal for this recipe. I used the broken one’s, as I did not have the whole urad dal handy.

10 Garlic Based Recipes

Garlic_recipesGarlic is in season always and mainly from early spring through fall. From simple baked potatoes to every recipe that we cook we need garlic, at least alternative days. You might not know it unless you start cooking and find that it is not there, you will be like the whole dish will not taste good as it should be. You will be hard-pressed to find a savory recipe that doesn’t use garlic. I pretty much add garlic to all my recipes. Let it be main dish, side dish or sauce. Do you not believe me ? if so, peel some cloves and start chopping and add it to your favorite recipe 😀 it gives great impressive superpowers. It is loaded with antioxidants that zap cancer-causing free radicals, and vitamin C and B6.

You get even the frozen peeled garlic but I personally prefer the firm plump white bulbs , I mean fresh garlic in the market :D.  Also you can garlic paste. I don’t use them always, but for some of my recipes like curries I do use garlic paste. Do you know that there is even National Garlic Day. Below here are some of my favorite garlic based recipes. I add garlic to most of my recipes, but these recipes are just based on garlic so if you don’t have garlic, don’t even think of trying them.  😀

Garlic Creamy Mushroom Spaghetti

I am not a great mushroom lover. But when I just toss them with garlic and butter, I can have the whole bowl. 😀 that garlic and butter is a deadly combination to mushroom. It elevates the mushroom taste. So I add them to my quesadilla, curries, white curry, tacos, pasta, pizza and everything now.

I used spaghetti but you can use any kind of pasta you fancy. And you can also use whole wheat or any kind 🙂 it is going to be yum. And you can always use any kind of mushrooms for this. Sometimes I add wine to my sauce, it gives surely a unique taste ;). And I mostly add spinach to it. But this time, I wanted to make something quick and wanted to make something with few ingredients that is available.

You wont be able to stop yourself from this scrumptious cream mushroom pasta.  The best part in this is that it is so quick and easy to make. I would say one of the best weekday dinner recipes. You can add some sauted chicken to it if you want to. The best thing about pasta is that you can create your own recipe with your favorite ingredients.

 

Most recipes of pasta, I add cheese to it but this was so good and creamy that I felt it is not necessary. But if you want you can add some goat cheese or parmesan cheese.

Garlic Creamy Mushroom Spaghetti

Ingredients
  • Pasta – spaghetti – 6 ounces

    For Mushrooms:
  • Butter – 2 tbsp
  • Garlic – 2 cloves, minced
  • Mushrooms – 14 ounces, sliced


  • For Sauce:
  • Butter – 2 tbsp
  • Garlic – 2 cloves, minced
  • Milk – 1.5 cups
  • Olive oil – 1 tbsp
  • Whole wheat flour – 2 tbsp
  • Salt and pepper to taste

    To garnish:
  • Cream or milk – ¼ cup
  • Fresh parsley – ¼ cup
Instructions
  1. Cook the pasta according to the instructions on the package. Boil water and add the pasta with the salt needed for pasta. Then remove and run the pasta through cold water. And toss with a little oil to prevent sticking.

  2. Take a pan in medium high heat, melt 2 tbsp of butter. Add 2 cloves of garlic and sauté it for a minute. Then add the mushrooms and sauté for 7-8 minutes until golden brown and it should be soft. Set this aside.
  3. Add 2 tbsp of butter to the same pan in medium high heat, add the 2 cloves of garlic and sauté for a minute. Then add the flour, stir fry quickly for 30 seconds and make sure it does not get lumpy. Add the milk slowly and whisk it as you add.
  4. Season with salt and pepper. Let the whole mixture simmer until it thickens. Add olive oil and water when needed if you think the sauce is very thick.
  5. When you think it has got into nicely creamy texture, toss the sauce, pasta and mushrooms together.
  6. Top it with fresh chopped parsley and some crushed pepper just before serving
Notes
You can always use any kind of pasta you fancy.

A simple garlic spinach curry, uniquely flavored with milk. I’ll place this right up with my most-loved comfort foods.

To be frank, when I really feel like having comfort home food, I have few recipes that I would like to make –  vengaya kuzhambu, rasam, mor kuzhambu, potato roast and there comes this recipe “spinach garlic curry”. I just love this recipe. This makes me feel good after having it 🙂 I am not exaggerating. I feel so! I always make this spinach curry with potato roast and basmati rice. I really like the flavors of spinach curry and basmati rice and with sides I need my potato roast. You should try this combo! It is just awesome! You can even have this as sides to roti or just plain rice. It can be made as vegan by adding coconut milk or soy milk. I came to know about this recipe from my friend Priyanka. She used to make it for us 🙂 I just adapted this recipe from that. Before having this, I was wondering spinach and milk combination, it did not feel good 🙂 Now I am in love with this! Thank you Priyanka :)!!!!

Vegan Note – . You can use coconut milk/ soy milk instead of milk to make it completely vegan.

Ingredients
  • • Cumin seeds (jeera) – 2 tsp
  • • Garlic – 8, chopped finely
  • • Onion – 1, chopped finely
  • • Green chilli – 1, chopped finely
  • • Tomato – ½, chopped finely
  • • Turmeric powder - ½ tsp
  • • Spinach – 3 cups, chopped or whole
  • • Chilli powder – 1 tbsp
  • • Coriander powder – 1 tbsp
  • • Cumin powder – 1 tbsp
  • • Milk – ½ cup
  • • Oil – 2 tbsp
  • • Salt – as needed
  • • Coriander leaves – For garnish
Instructions
  1. Heat oil in a large heavy bottomed non-stick skillet over medium heat, add jeera, garlic and add the onions and chillies and fry until they are golden brown.
  2. Now add the tomatoes, salt and turmeric and fry until golden brown.
  3. Now stir in the chopped spinach to this and add 2 tbsp of water and close the lid. Simmer it for few minutes till the spinach leaves shrink.
  4. Now add the chilli powder, coriander powder and cumin powder. Fry this for a minute.
  5. Now add milk and Stir in the mixture few times and the milk should evaporate 90%.
  6. Now switch off and Garnish with coriander leaves.
Notes

GarlicOkra-2This is a very easy and spicy okra recipe. You can make this in twenty minutes. It tastes great to have with rice and rasam/sambhar or Indian bread like roti or phulkas. Or with rice and some dal curry. Adjust spice according to your taste as this may be spicy for some.

I love Bhindi/okra always. I used to try a lot of recipes with bhindi. My mom makes lot of okra at home, she always tell me it’s good for health 🙂 And I never said no as I always loved it! 😉 I made this with Mor rasam and tasted heavenly. And anything with garlic sound heaven to me 😉 I love garlic so much! I have posted one more recipe with okra which is stuffed okra, you should check that too! It came out so good!!!

Ingredients
  • Bhindi/ Okra – 200 gms
  • Mustard – ½ tsp
  • Urad Dal – 1 tsp
  • Curry leaves – 3-4, chopped finely
  • Cumin seeds – 1 tsp
  • Onion – ½ cup, chopped finely
  • Garlic – 4, whole crushed with skin.
  • Green chilli – 1, chopped finely
  • Turmeric powder – ½ tsp
  • Coriander powder – ½ tsp
  • Red chilli powder – 1 tsp
  • Asafoetida/ Hing – a pinch
  • Oil – 2 tbsp
  • Salt – 1 tbsp
Instructions
  1. Wash, wipe and dry the bhindi/okra. Chop the bhindi/okra finely and keep aside. Cr
  2. Heat oil in a pan in a medium flame, crackle the mustard seeds and then add the urad dal,cumin seeds and curry leaves.
  3. When the urad dal turns golden brown, add the onion, green chilli and garlic.
  4. When the onions turns golden brown,add the okra/bhindi with turmeric powder, salt, red chili powder and coriander powder.
  5. Sprinkle a tbsp. of water and cover the pan and cook for 5 minutes.
  6. Now cook without any lid till the oil starts separating out and bhindi has cooked.
  7. Stir sometimes when the okra is cooking. And when is golden brown and when you get that nice aroma switch off and serve with hot rice/ phulka.
