🍜 Sticky, Glossy Chilli Garlic Noodles (with a Prune Twist)

If you love bold, saucy noodles that come together in minutes — this one’s about to be on repeat.

These Sticky Chilli Garlic Noodles get a delicious upgrade with a surprising ingredient: California Prunes. Blended into the sauce, they add natural sweetness, depth, and that irresistible glossy texture — without needing extra sugar.

It’s rich, comforting, slightly spicy, and perfectly balanced — the kind of quick meal that feels indulgent but is secretly wholesome.

And honestly? Once you try prunes in a savoury sauce… there’s no going back.

🛒 Ingredients (Serves 2–3)

For the sauce:

  • 1 cup California Prunes
  • 3–4 garlic cloves
  • 1–2 tsp chilli paste (adjust to spice level)
  • 2 tbsp soy sauce
  • 1 tbsp vinegar (rice vinegar preferred)
  • 2–3 tbsp water (to loosen)
  • 1 tsp sesame oil (optional but recommended)

For the noodles:

  • 200–250g noodles of choice (ramen, spaghetti, hakka noodles)
  • 1 tbsp oil

Optional add-ins:

  • ½ cup stir-fried veggies (bell peppers, cabbage, carrots)
  • Protein: tofu / chicken / shrimp

For garnish:

  • Sesame seeds
  • Spring onions
  • Crispy onions or toasted breadcrumbs (for crunch)

🔪 Step-by-step method

1. Make the prune chilli garlic sauce

Add the following to a blender:

  • California Prunes
  • Garlic
  • Chilli paste
  • Soy sauce
  • Vinegar
  • Water

Blend until smooth and glossy.

👉 The texture should be thick but pourable — adjust water slightly if needed.


2. Cook the noodles

  • Cook noodles according to package instructions
  • Drain and set aside
  • Toss lightly with a few drops of oil to prevent sticking

3. Cook the sauce

  • Heat 1 tbsp oil in a pan
  • Pour in the blended sauce
  • Let it cook for 2–3 minutes until slightly thickened and aromatic

👉 You’ll notice it turning deeper in colour and glossy — that’s the prunes working their magic ✨


4. Toss everything together

  • Add cooked noodles to the pan
  • Toss well until fully coated and glossy

👉 Add veggies/protein here if using

Cook for another 1–2 minutes so everything absorbs the sauce.


5. Finish & serve

Top with:

  • Sesame seeds
  • Spring onions
  • Crispy onions or toasted crumbs

Serve hot and enjoy immediately 🍜

  • Adjust chilli paste based on your spice preference
