Egg Omelette Kurma

Vegetable egg omelette cooked in a curry made with flavorful roasted whole spices and coconut. I used Burnbrae Egg Creations Garden Vegetable egg whites to make the omelette which simplifies cooking and makes it even easier!

I have to tell you something! I used the egg white carton from Burnbrae. If you haven’t tried it, you should know that Burnbrae’s Naturegg Simply Egg White products are real, pasteurized egg whites.

Burnbrae cracks and separates the eggs for you – creating a simple and convenient product to help get back on track from the holidays. They separate the egg whites and add vegetables or herbs (depends on the product you buy) to it with the right amount of salt and everything. Basically, you just have to add it to the pan straight and cook like any other omelette. Burnbrae is the brand I use here for eggs in Canada. I always buy their eggs 🙂 so this is not at all new to me! Very convenient and saves a lot of time. Surely a big help for mornings! Although whole eggs are healthy, Naturegg Simply Egg Whites are a lighter meal option after the holidays (fewer calories and fat). You can look for other recipes to use from their egg whites – Burnbrae recipes. They sent a beautiful package 🙂  🙂

I used Burnbrae’s Garden Vegetable Simply Egg Whites, which was perfect for this recipe. Saved some good time for me. You can very well use the eggs for this recipe and make your omelette to add to the curry.

I like making kurma as it is easy and quick to prepare. We can have it with rice or with Indian bread like naan, paratha or parotta. I have couple of kurma recipes on my blog ready: Lamb/mutton kurma, chicken spicy kurma, Potato Kurma, Paneer baby corn chettinadu kurma

You can have this egg kurma with hot rice, Jeera rice or with Indian bread like naan, paratha or parotta.

Egg Omelette Kurma

Ingredients
  • To grind:
  • • Coriander seeds – 2 tsp
  • • Cumin seeds – 2 tsp
  • • Fennel seeds – 1 tbsp
  • • Coconut – 3 tbsp, freshly grated
  • • Chilli powder – 1 Tsp
  • • Red chillies – 3, whole
  • • Poppy Seeds – 1 tbsp
  • • Ginger – 2 inch
  • • Garlic pods – 5

    Curry:
  • • Oil – 1.5 tbsp
  • • Red onion – 1 cup
  • • Green chillies – 1, chopped finely
  • • Tomato – ½ cup, chopped finely
  • • Turmeric powder – ½ tsp
  • • Coriander – 2 tbsp, chopped finely
  • • Lemon juice – 1 Tsp
  • • Salt – to taste

  • • Burnbrae Egg Creations Garden Vegetable Egg Whites or
  • • Omelette whites: Using beat 2 eggs with chopped vegetables, salt (1/2 tsp)and pepper (1/2 tsp).
Instructions
  1. Omelette: Take a pan of oil over medium heat and pour the white egg or beaten egg batter. When its golden brown and turn the other side. Remove, place it on a plate and roughly chop (bigger pieces) and set aside.

  2. Masala: Blend all the ingredients under to grind with 2 tbsp of water.

  3. Curry: Take a pan with oil over medium heat, add the onions and green chillies with a bit of salt. Saute well till the onions get transparent for around 2 minutes.



  4. Add the tomatoes with turmeric powder. Saute well for a minute

  5. Add the blended paste and sauté for 5- 6 minutes in medium flame till it oozes out oil.

  6. Add one cup of water, mix well, close the lid and let it boil for 5 minutes. Taste and adjust your salt level accordingly now.

  7. Then add the omelettes to it and let it boil for another 5-6 minutes.
  8. Garnish with freshly chopped coriander leaves, squeeze some lime juice and switch off.

I always tend to have eggs at home. So, if you are having some guest coming home, and you wanted to make a quick tasty side dish, this is the one you need to make. And quickly serve with some hot basmati rice.
I made this egg  masala long back when some of my friends came for lunch with my favorite Hyderabad Lamb Biryani. It was drafted for a long time in my list to post, thought this is the right time to post it because I did not pretty much cook anything for past one week. The masalas in this egg roast are finger licking good. Eggs are the best friend for bachelor cooking I guess, easy to make it for a side dish. So, if you wanted to make it special with a comfort lunch without much of work and grocery shopping ;) Then go for this!

Quick & Simple Egg curry in 20 Minutes

Ingredients
  • Eggs - 4
  • Oil - 2 tbsp
  • Cumin Seeds/ Jeera - 1 tsp
  • Red chilli - 2, Broken
  • Curry Leaves - 1 sprig
  • Garlic - 4, very finely chopped
  • Ginger -1/2 inch, finely chopped
  • Green chilli - 1, small, finely chopped
  • Onion - 1 big or 1 cup, very finely chopped
  • Tomato - 2 small, or 1 cup, very finely chopped
  • Turmeric powder - ¼ tsp
  • Red chilli powder - 1 tsp
  • Coriander powder - 1 tsp
  • Cumin powder - 1 tsp
  • Pepper powder - 1 tsp
  • Fennel powder - 1 tsp
  • Garam masala - ¼ tsp
  • salt - about 1 tbsp ( as per your taste)
  • Coriander leaves - 1 tbsp, finely chopped, for garnishing
Instructions
  1. Hard boil the eggs by boiling the eggs – Boil water, add a tsp. of salt, add eggs and cook for 10 mins in medium flame. Once done, add them to cold water and set aside for 5 mins, make a small crack using a knife or just cracking in a nearby object and remove the egg shell carefully. Do not cut the eggs, but just give a quick 4 slits on the eggs but not chop them. this will make the masalas go on into the curry.
  2. Heat oil in a pan; add hing, broken red chilli and jeera and sauté for few seconds. Add chopped onion, curry leaves, chopped ginger and chopped green chilli, chopped garlic and sauté till onion becomes translucent and golden brown. Add chopped tomatoes and turmeric powder, sauté till its little mushy.
  3. Now add the chilli powder, coriander powder, cumin powder, pepper powder, garam masala and mix well. Saute it well for 2-3 minutes to raw masala. Now add the eggs and then add ½ cup of water and make it boil in medium flame closed for 2-3 minutes.
  4. It will reduce into an onion tomato pasty consistency and will ooze out oil on sides.
  5. Finish with coriander leaves and serve it hot!

1. It is spicy curry, so adjust your spice level according to it!

If you make a some  restaurant style Biryani, pulao for this egg fry,:) that’s a complete lunch. Even it tastes great with  plain rice or Indian bread.

This masala toast is a great recipe for evening snack or perfect for morning breakfast. I would say it is almost similar to the French toast but this is a savory version of it. The bread is dippen in a masala egg mixture and toasted on a griddle pan.

You can use any kind of vegetable with eggs, I used the classic combination of onions, tomato and capsicum. You can always skip even the onions, tomatoes mint and bell pepper. You can even add parsley to this or even grated carrots. In my mind this is quick recipe when you have guests at home, and you just want to make something quick but palatable. This is the best to make as evening snakc or breakfast recipe. It is totally customizeable. This egg will just nicely coat on bread. You will most probably have milk,bread and egg at home always. So, this is perfect savior always. This is also kid friendly. Is that not perfect ?!

 I made this for my friends before a month on a morning on a long weekend when they came from Ottawa. I wanted to make something quick for all of them. So, I just made this and they all loved it. Me happy 🙂 as always. I did not slice off my sides from bread because I like my bread sides. The bread I used was sesame bread. I once had it at my work place so got that week then never went there to that store to buy it. I am lazy to go all the way to that shop just to buy sesame bread. But will most probably go this week or next week to buy for my boyfriend as he loves this sesame bagel, he should probably like sesame bread too.

 I have some quick morning breakfast recipes using bread that you can try – Vegetable Bread Toast Sandwich, Creamy Mushrooms and Greens on Toast, Sweetened condensed milk toast with Orange zest, Simple Poached egg and avocado Toast. And also other breakfast recipes.

Vegetarians can replace the egg by some maida (all-purpose flour) instead of eggs.

  • Bread Slices – 3

  • Ginger garlic paste – 1tsp
  • Turmeric powder – ½ tsp
  • Coriander leaves - 2 tbsp, very finely chopped
  • Crushed pepper – 1 tsp
  • Cumin powder – ¼ tsp
  • Garam Masala – ¼ tsp
  • Green Chilli – 1, finely chopped
  • Chilli powder – ½ tsp
  • Milk – 3 tbsp
  • Salt – as needed
  • Oil/Butter – as needed
  • Mint leaves – 1 tbsp , finely chopped (Optional)
  • Onions – 2 tbsp, finely chopped (optional)
  • Bell pepper/ Capsicum – 2 tbsp, finely chopped (Optional)
  • Tomatoes – 1 tbsp, finely chopped (Optional)
Instructions
  1. Take a chopping board, chop onions, tomatoes, bell pepper, some coriander leaves, mint chili finely.
  2. Keep a pan or griddle in heat.

  3. Take a bowl and break eggs, add ginger garlic paste, turmeric powder, milk, crushed pepper, chilli powder, chilli, coriander leaves, salt and mint leaves. Use a whisk and beat it well. Add onions, tomatoes,bell pepper and whisk it again.

  4. Take the bread now (You can remove the sides) and cut it into triangle shape.
  5. Add butter/oil to the pan, and when it melts, now dip the bread in the marination and place it in the pan.

  6. When one side is cooked, sprinkle some oil and cook till the other side is toasted too.
  7. Serve it hot with some fresh juice.
Notes
Avoid green chilli and chilli powder if you are going to serve to kids or if you can’t take spicy foods.

One of the famous Indian one pot meal biryani using hard boiled eggs. It has amazing flavors. Biryani has become one of my all time Sunday recipes. I guess I have posted 4 biryani recipes – Lamb Biryani, Shrimp Biryani, Paneer Biryani and Vegetable Biryani. Now this is the fifth one! We can make the Biryani and just have it with no Eggs also. It still tastes great.

I used to frown to prepare biryani before 4 years. I thought it was a big thing, and it is best had only in restaurants. But now 🙂 it has become a part of my Sunday lunch. It took about an hour to prepare. But on weekends, it is fine and also we don’t need to prepare side dish for this. It is great to have with any raita 😉 and especially with garlic raita. I blended the masala and all ingredients and then cooked the rice and masala together and topped the fried masala egg on it.

Hyderabadi Egg Biryani

Ingredients
  • • Oil – 1tbsp
  • • Bay leaf – ½
  • • Cinnamon – 1 thin piece
  • • Cloves – 3
  • • Cardamom pods -2
  • • Tomato - 1, small, chopped
  • • Yogurt – 2 tbsp
  • • Basmati Rice – 3 cups
  • • Biryani Masala – 1 tbsp
  • • Red chilli powder – 1 tsp
  • for garnish:
  • • Saffron – ½ tsp dissolved in ½ cup warm milk
  • • Ghee – 2 tbsp
  • • Mint – 2 tbsp finely chopped (to garnish)
  • For the Egg masala:
  • • Ginger garlic paste – 1 tsp
  • • Red chilli powder – 2 tsp
  • • Black pepper powder – 1 tsp
  • • Besan flour- 2 tbsp
  • • Salt – 2 tsp
  • • Boiled eggs - 4
  • For fried onions:
  • • Onions – 2 small onions, ½ cup, sliced thinly
  • • Cashewnuts – 6
  • • Oil – to fry (3 - 4 tbsp)
  • For rice masala:
  • • Cashew nuts – 6
  • • Khus khus (white poppy seeds) – ½ tbsp.
  • • Cumin seeds/ jeera – ½ tbsp
  • • Fennel seeds – ½ tbsp.
  • • Coconut – 2 tbsp
  • • Garlic – 4 pods
  • • Ginger – 1 inch
  • • Green chilli – 4
  • • Mint – ½ cup, chopped finely
  • • Coriander leaves – ½ cup, chopped finely.
Instructions
  1. Wash and soak rice for at least 30 -40 minutes.


    For Fried onions:
  2. Heat a pan with oil, add the sliced onions and cook in medium heat till turn golden brown. Add cashews in the end and fry too. Stir in the middle so that it does not stick to the bottom. Set aside.



    For Egg masala:
  3. Mix all the ingredients under “Egg masala” with little water and add the Eggs. Heat a pan with 1 tbsp of butter. Now add the marinated eggs and coat till the eggs gets golden brown.




    For masala:
  4. Grind the garlic, ginger, mint, coriander, cashews, coconut (optional), poppy seeds, fennel seeds, cumin seeds, chillis with two tbsp. of water into a smooth paste.
  5. Now take a big pan, add oil or ghee in medium heat, add the spices (cardamom, bay leaf, cinnamon, cloves), and then add the tomatoes and grinded paste and sauté them till the tomatoes are not raw and little mushy.
  6. Now add the yogurt, chilli powder, biryani powder and mix well. I always move the skillet away from the heat when adding yogurt which prevents it from curdling.
  7. Now after returning the skillet back to the stove, add the rice and salt and water. (Quantity of water to be added is for one cup of rice, it is 1.5 cups of water). Mix well and close the lid tight and keep it in medium heat for 10 minutes.
  8. Now add the marinated eggs, fried onions and chopped mint for garnish and keep it in low for 5 minutes.
  9. Drizzle the saffron and milk over the rice and Switch off, and keep it closed for another 5 minutes. They will help the eggs get the masala flavors from rice and vice versa.
Notes
You can skip coconut while grinding and add coconut instead of water while boiling.

Mumbai Style Egg Bhurji

EggBhurji_nameIndian scrambled eggs, spicy and loaded with veggies. Perfect for a healthy breakfast or pairs well with rotis or a sandwich filling.

I would say it is one of the Mumbai’s famous and fast selling foods when it comes to street corners and food stalls. It is also called as Anda bhurji, scrambled eggs, Bhurji pav. This will stand out of all the dishes on your dining table. I used colorful peppers to make it look more beautiful.

It has onions, ginger, tomato, green chillis and green red peppers. You can even use peas in these. I have used pav bhaji masala in this recipe. Pav bhaji is a popular Indian chat food in India and this masala is used in this recipe. You can get this masala at any Indian grocery stores. You can replace 2 tsp of pav bhaji masala with 1:1 Red chilli powder and garam masala powder.

It is so easy to make these. And as I always say, eggs are saviors if you don’t have anything or lazy to make a time consuming dinner. They serve best when had in the breakfast. Very healthy! You can also have them with rice and some curry. Or just have it as a snack in the evening with some tea. You can also place them in pita or taco or have it in a sandwich filling.

Mumbai Style Egg Bhurji

Ingredients
  • Eggs – 3 large.
  • Onion – 1 small, finely chopped
  • Green chillies – 2, finely chopped
  • Green capsicum – 1, finely chopped ( I added green and red half and half)
  • Grated ginger – 1 tsp
  • Tomato – 1 small, finely chopped
  • Pav bhaji masala – 2 tsp ( or 1 tsp chilli powder and 1 tsp garam masala)
  • Pepper powder – ½ tsp
  • Turmeric powder – 1 tsp
  • Butter – 1 dollop
  • Coriander leaves – 3 tbsp, finely chopped
  • Milk – 2 tsp
  • Salt – 1 tbsp
  • Oil – 2 tsp
Instructions
  1. In a large bowl, break one egg at a time and whisk the egg yolks and whites together until light and fluffy.
  2. To the egg mixture, add the salt, turmeric powder, pav bhaji masala and pepper powder. Whisk well till they all combine well.
  3. Take a wok/ pan on medium heat and add 2 tsp of oil, add the grated ginger, the chopped onions, the finely chopped bell peppers and the green chillies. Sauté those until the onions and peppers are soft and tender.
  4. Now add the chopped tomatoes to it, and then sauté those until the tomatoes are lightly softened but not very mushy.
  5. Now add the egg mixture to it, keep stirring the mixture continuously until you begin the eggs coming together. And also they should have the crumbly texture. Keep stirring or else it may stick to the pan.
  6. When they have cooked completely, add the butter and milk and stir well.
  7. Switch off and Garnish with coriander leaves and serve.
Notes
1. Adding milk makes it not dry.
2. reduce the green chilli if you like it not spicy.

If you have eggs at home, this is one of the flavorful luscious recipes that you can make for a quick lunch. If you are having some guest coming home, and you wanted to make a quick tasty side dish, this is the one you need to make. :)!  I will always have eggs at home, because I don’t eat eggs much, it always stays there, sometimes I like to have them as omlettes or scrambled eggs 😀 But I even stopped that now . Then why do you get them 😀 is the question I get when I buy them! Ok, I buy them always for my face pack and hair pack :D!  I cooked this in a similar manner to the way I prepared pepper chicken fry. The masalas in this egg roast is finger licking good. When my friend used to make pepper chicken fry before years, I used to just taste the masala and would go WOW! 😀 So, I am sure this is very tasty. If you like egg and spicy food then you will love this recipe. I think eggs have no taste as such and you just have to add the flavors to make it tasty. So this is a perfect egg recipe. Eggs are the best friend for bachelor cooking I guess, easy to make it for a side dish. So, if you wanted to make it special with a comfort lunch without much of work and grocery shopping 😉 Then go for this! The main flavor for this recipe is the flavors of pepper corns, coriander seeds and fennel seeds. If you want to reduce spiciness, reduce the pepper quantity or skip the chilli powder. If you make a simple tomato rasam, sambhar, biryani, pulao for this egg fry 🙂 , that’s a complete lunch. Even it tastes great with phulka. You can make the blended masala and store in an air right container, it’s equally good.

Egg Pepper Roast / Muttai Milagu Varuval

Ingredients
  • Eggs – 4
  • Oil – 2 tbsp
  • Hing – a pinch
  • Jeera/ cumin seeds – 1 tsp
  • Red chilli – 1, broken
  • Onion – ¾ cup, very finely chopped
  • Garlic – 4, very finely chopped
  • Ginger – ½ inch, finely chopped
  • Curry leaves – 1 sprig
  • Green chilli – 1, small, finely chopped
  • Tomato – ¼ cup, finely chopped
  • Turmeric powder – ¼ tsp
  • Garam Masala – ½ tsp
  • Red chilli powder – ½ tsp
  • Coconut powder/ Grated coconut – 2 tsp
  • Salt – 1 tbsp

    Roast & Grind
  • Coriander seeds – ½ tbsp
  • Whole black pepper – ½ tbsp.
  • Fennel seeds – 1 tsp
Instructions
  1. Hard boil the eggs by boiling the eggs – Boil water, add a tsp. of salt, add eggs and cook for 10 mins in medium flame. Once done, add them to cold water and set aside for 5 mins, make a small crack using knife or just cracking in nearby object and remove the egg shell carefully. Cut the eggs vertically set aside.
  2. Meanwhile when the eggs are getting cooked, heat a pan, and fry roast the ingredients under to “roast & grind” until light brown. You will get nice aroma, switch off, allow it to cool and blend into a smooth powder but little coarse. I used my mortar & pestle. So it was perfect.
  3. Heat oil in a pan; add hing, broken red chilli and jeera and sauté for few seconds. Add chopped onion, curry leaves, chopped ginger, and chopped green chilli, chopped garlic and sauté till onion becomes translucent and golden brown. Add chopped tomatoes and turmeric powder, sauté till its little mushy.
  4. Add powdered pepper spice powder, garam masala, red chilli powder, coconut powder and fry in medium to slow heat for a minute. Add 3 tbsp of water, salt, add the sliced eggs, cover and cook for 2 mins in medium flame.
  5. Gently turn the eggs and add another 2 tbsp of water, cover and cook for another 2 mins and switch off when the masala becomes roasted, garnish with coriander leaves and 1 tsp of lime juice.
Notes
1. This pepper fry is little on the spicy side, so adjust according to your taste. You can add the blended masalas slowly and taste them. Skip the chilli powder if you want. You have green chilli, pepper, red chilli powder, and one broken red chilli. So skip any one if you think it’s spicy for your taste buds.
2. You can replace with ginger garlic instead of chopped ginger garlic if you think it’s a big step to do.
3. Do roast the pepper masala well to remove the rawness smell.
4. Do not overcook eggs as it might become rubbery or hard.
