Oats is something I have 5 days a week for my breakfast. It is very quick to make oats. Oats are packed with fiber which will keep us full longer. I had this milkshake one day, and the next day I was totally looking forward to make the same. Ingredients
  • Oats ( I used banana pecan and almond oatbox oats) – Âź cup
  • Almond milk/ milk – 1 cup
  • Honey – 1 tsp
  • Ground cinnamon – Âź tsp
  • Fruits like blueberry, orange, apple, berries – Âź cup
Instructions
  1. In a blender, combine all ingredients, puree until smooth.
  2. Serve immediately with some granola oats, fruits on top.

CheeseMuffin-13Individual convenient cheesy muffins for rushed mornings! Savory bell peppers, herbs, eggs and cheese muffins utterly delicious and moist!

This recipe I usually make in a corning ware and serve it for a lot of people for breakfast. And this time Instead of big bread, I think to portion them in muffins. You can use any type of flour you want like corn flour or wheat flour. Made on a Sunday, it lasted for a week breakfast. Use whatever cheese you want to like smoked Gouda, cheddar or Swiss or parmesan. You can even add bacon to it. It is even perfect for a quick breakfast or a light afternoon snack. If you plan to treat for feeding a crowd, this is something quick and great.

Jalapeno Herbs Savory Cheese Muffins + Giveaway (baking pan)

Ingredients
  • Cheddar – ½ cup, shredded
  • Olive oil - 2tbsp
  • Jalapeno – 5, rounded circle cut, Remember to save to top the muffins!
  • Salt – to taste
  • Black pepper- 2 tsp
  • Bell pepper – 3 tbsp, chopped finely
  • Thyme – fresh or dried
  • Nutmeg – a pinch
  • Red chilli flakes – 2 tsp
  • Garlic (fresh or dried) – 2 garlic chopped
  • Egg – 4
  • All-purpose flour – 1¼ cup
  • Baking powder – ½ tsp
  • Milk – 3 tbsp
  • Sugar – a pinch
  • Parmesan cheese - garnish
Instructions
  1. Preheat your oven at 375F.
  2. In a bowl mix all dry ingredients. Add cheese and toss.

  3. In another bowl, mix all wet ingredients including bell peppers and jalapenos. Remember to save some jalapeno to top the muffins.

  4. Combine wet ingredients into dry with a wood spatula, until well incorporated. Please make sure to not over mix.
  5. Apply little oil to a standard-size ice-cream scooper, and fill each cup with a well-rounded scoop of the batter.

  6. Sprinkle little cheese and jalapeno.
  7. Place them into the oven and lower the temperature to 350F and bake. Bake for 20-22 minutes until golden brown tops. And try inserting a toothpick comes out almost clean with a few crumbs. Remove from oven and wait for 1-2 minutes, and remove from the muffin pan.

Sandwich on the table in less than 30 minutes! Easy, quick and healthy way to eat a sandwich.

Being a vegetarian, I tend to have a sweet breakfast mostly when I go outside. So, I always have some donuts or something when I go outside. And mostly hash browns (fried potatoes) are the only ones that are not sweet. Hashbrowns are potato patties. They are made by grating some potatoes and are put together and fried or roasted. I spiralized them instead. When I wanted to make a recipe with spiralizer, I started to brainstorm on what else I could make with my spiral slicer other than noodles, pasta, noodles soup, baked spirals, spiral fries. Then I decided it’s going to be breakfast with some potatoes, cucumber and carrots. I found that making them in these fine noodles for the potatoes will make them crispy and brown in few minutes time. You should make sure that we need a good squeeze of the potatoes to get all the water out. I always crave savory flavors for breakfast and lunch. And there is nothing better than a potato sandwich with some veggies and cheese.  You can even add a poached egg or omelet or avocado or some asparagus or some roasted bacon. I nestled on top some grated gouda cheese. I just made a sandwich for me, so instead of making a huge patch of potatoes in the oven, I decided to whip up these patties in a skillet. I surely did not want to fry them 😉 Fried potatoes in the morning sound great but surely not healthy. I always keep mentioning that it is not good to skip breakfast. So I always like to make a breakfast quick and less than 20 minutes. I have some Breakfast recipes less than 20 minutes already in the blog. The spiralizer I used is Microplane spiralizer.

Spiralized Potato Veggie Cheese Sandwich

Ingredients
  • Potato – 1, large, shredded on large holes in grater
  • Shallots – 3, chopped finely
  • Garlic powder – 1 tsp
  • Cucumber – ½, Âź cup approx
  • Carrot – ½, Âź cup approx.
  • Chives herbs – 1 tsp (dried or fresh), I used dried
  • Red chilli flakes – 1 tsp
  • Rice flour – 2 tsp
  • All purpose – 2 tsp
  • Salt – to taste
  • Cheese – 2 tbsp, Grated (I used gouda cheese)
  • Grounded pepper, red chilli flakes, herbs (chives or thyme) to garnish
  • Oil – 1 tbsp
Instructions
  1. Shred the potato using spiralizer and add chilli flakes, herbs, shallots, garlic powder, rice flour, all-purpose flour and salt. Mix well. Keep it aside.
  2. Use a flat iron skillet. Heat to medium high the pan with 1 tbsp of oil.
  3. Then using your hand, grab the potato mixture and squeeze excess water. Tap it to make the patty. Do not tap it very thin then it might be over crispy. Keep it a little thicker for a warm and soft center. Drop in the pan.
  4. Flip your hash browns when a bottom is nice and crispy. I kept checking on them. And brown the other side too.
  5. While the potatoes are cooking, spiralize cucumber and carrot.
  6. Place the potatoes in a tissue to drain out the oil. Then place one the potato patty on the plate, top them with spiralized cucumber and carrot. Grate some cheese on top. Garnish with red chilli flakes, pepper and dried herbs. And close the sandwich with the other potato patty and enjoy!

Another quick 10 minute sandwich for breakfast 🙂 . Do not skip breakfast!

You think you don’t have enough time to make Breakfast? Most of our mornings goes by rushing that we tend to skip Breakfast.



This is one of my favorite sandwiches and I made a mini one with it. My sister loves paneer and I made this for her :)! Easy, quick and tasty one. Takes about 10 minutes to get ready and are super fresh and delicious. Bored with your toast? Spread this delicious homemade paneer tofu mix sauce on your bread and enjoy! This bread toast is easy to fix up with less effort for kids. You can sandwich them between tortilla or roti/naan .

You can even make this as full sandwich rather than mini sandwiches. We can even have this as an appetizer, snack, pot luck party dish. Sanwiches always in my favorite food list for my mornings. If I am bored with oats, I just go and make my own spread sandwich :)!

Mini Paneer/Tofu Corn Sandwich

Ingredients
  • Paneer/ Firm tofu – ½ cup crumbled
  • Corn (frozen) – Âź cup
  • Big onion – ½ finely chopped
  • Ginger Garlic paste – ½ tsp
  • Green chilli – 1, finely chopped
  • Capsicum/ Bell Pepper – 2 tbsp, finely chopped
  • Tomato ketchup – 2 tsp
  • Red chilli powder – ½ tsp
  • Chaat masala – 1 tsp
  • Garam Masala Powder – Âź tsp
  • Coriander leaves – 1 tbsp finely chopped
  • Salt – to taste
  • Oil – 2 tsp
Instructions
  1. Heat oil in a pan; add onions, green chilli, ginger garlic paste and sautĂŠ till golden brown.
  2. Add capsicum and sautĂŠ for a minute, then add chilli powder, garam masala powder, tomato sauce and salt. I would give a quick stir, it should not be too dry or too saucy.

  3. Then add corn and paneer/tofu crumble. Mix well.
  4. Cook for a minute, garnish with coriander leaves and switch off.

  5. Toast the bread (with little butter or plain) on both sides. Chop the sides, cut them into mini sizes, Spread the filling on the top side, chop and squeeze some lime juice to garnish. Close the sandwich and fix a tooth pick to it.
Notes
1. I used frozen corn, you can use fresh corn , boil for few minutes, dry and keep it.
2. Replace corn with any veggies like peas or carrot.

2 Minute Chocolate Peanut Butter Crumb Mug Cake

Moist chocolatey cake topped with chocolate cinnamon streusel in just 2 minutes. The quickest way to treat yourself! It’s only one serving size with no eggs. Drizzle some of your favorite syrup if you really want to but the crumb is just enough to cover. It has chocolate and peanut Butter! DOUBLE Yum! Right 🙂

I have been experimenting with different mug cakes ever since I heard about them before two years. It’s so quick that I don’t click pictures most of the time. And my recent creation is this chocolate peanut butter mug cake. This is one of the ideas that popped into my head when Hersey’s sent me these two lovely jars of peanut butter chocolate spread. Yes, you are reading that right. 🙂 It is Hershey’s Reese peanut butter chocolate spread. It was in United States and now in Canada too. I had lot of ideas when I received it but I wanted to try something quick and tasty recipe only. I believe that quick recipes are what all we need in this busy life. I tried not digging into the jar because I want to try some great recipes 😉 I would surely spoon in otherwise 😀 if you know me. You can also try this recipe with plain chocolate or peanut butter spread. I always like to have mug cakes for breakfast with some milk or coffee. You can have it 🙂 even as a snack 😉 and actually you don’t need a reason to have this 😀 !

Vegan note: Replace the yogurt with soy milk or coconut milk.

2 Minutes Chocolate Peanut Butter Crumb Mug Cake

Ingredients
  • Vegetable oil – 3 tbsp.
  • Granulated sugar – 2 tbsp
  • Vanilla extract – ⅛ tsp
  • Chocolate Peanut Butter – 2 tbsp
  • Yogurt – 2 tbsp
  • All-purpose flour – 3 tbsp
  • Baking soda – ⅛ tsp
  • Cinnamon – ½ tsp
  • Salt – a pinch


  • Streusel:
  • Ground cinnamon – ⅛ tsp
  • Light or dark brown sugar – 1 tbsp
  • Semi-sweet chocolate chips – 1 tbsp
Instructions
  1. Make the streusel by combining all the streusel ingredients into a small bowl.
  2. In a mug, add vegetable oil, sugar and mix well. Then add the vanilla extract, the star ingredient “chocolate peanut butter”, yogurt and mix well.
  3. Now add the flour, cinnamon, baking soda, salt to it. Mix all well.
  4. Top it with the streusel.
  5. Microwave for 2 minutes on high. Start checking from 1 minute 20 seconds. Mine was done exactly at 1 Minute 30 seconds. Even keeping in microwave for long can turn it rubbery.

So I am trying to make a collection with some quick healthy, hearty morning meals. You do not have to limit the delicious breakfast foods to the morning hours ;)! Takes only 5 minutes to prepare – Toasting bread with butter, raining it with milk and some orange zest! Sweet & refreshing! Definitely decadent.

Prepare this when you want to have it right away. I am saying this because the condensed milk would melt on the butter toasted bread  thumbsupdelicious! Orange zest is fresh to have as soon as you grate them. I was thinking as I was making it that it would be really sweet but trust me it was perfect!

Everybody loves quick and simple recipes. Kids would love this recipe because of the taste combination and sweetness. You can make this in 5 minutes in the morning or as a snack. Perfect for a breakfast I would say!  as I made this twice already.giggle

White bread lightly toasted with just butter is so good on its own but just a drizzle of this sweetened condensed milk is delicious. We do not want to have this on a daily basis; it might be sweet and then would get bored on few days. Indulge once in a while with this sweet toast with refreshing orange zest. I always love sweetened condensed milk. It is so delicious. I can take a spoonful of the sweetened condensed milk from the jar 🙂 Not more than a spoon but for sure. And most times I eat Nutella 😉 from the jar. Many does that 😉 I am sure!!! If you have this stored, there are lots of quick recipes you can do with this. I have already made a coconut ladoo/balls, saffron coconut Fudge/Burfi using sweetened condensed milk. I even made a carrot ladoo using the same.

 I used the store bought sweetened condensed milk. But I have made this sweetened condensed milk many times. It will thicken when you keep it in fridge, but it won’t be as thick as store bought but surely it is of same good taste. I had the leftover condensed milk I used for carrot coconut ladoo. I wanted to use for something quick and tasty.  Here comes the recipe for it. I also prepared a recipe note for sweetened condensed milk. You can always prepare and use it later.

 Sweetened Condensed Milk recipe:

It will make around 1 cup

Ingredients:

Whole milk – 2 cups

Granulated sugar – 3/4 cup

Vanilla extract  – Âź tsp

Method:

Take a heavy bottomed sauce pan, mix together milk and sugar. Warm until steaming. Lower the heat and simmer for 2 – 2 ½ hours or until it thickens slightly. 

When reduced to half, stir in the vanilla extract. Switch off and store in an airtight container and cool it. Keep it in fridge for 2 weeks.

Vanilla extract is optional here.

Vegan Note: You can use coconut milk to make the sweetened condensed milk. You can skip the butter and toast it plain 🙂

Ingredients
  • Butter – 1 tbsp
  • Bread slices – 2
  • Fruits – few (I used strawberry)
  • Orange Zest – 2 tsp
  • Sweetened condensed milk – drizzle as per your taste
Instructions
  1. Take a skillet and heat 1 tbsp of the butter on medium heat until melted.
  2. Place the bread slices into the butter and toast it for a minute until golden brown. Now flip the bread and toast for another minute. Switch off.
  3. Place the toasted bread on serving plates with some fruits. Drizzle condensed milk over the toasted bread (generously). Grate some orange zest on it and serve immediately.
