🌿 Simple Pleasures: Eggplant Rice, Raita & Chips on a Sunny Afternoon

here’s something deeply comforting about a plate of home-cooked food that doesn’t try too hard—just honest flavors, familiar aromas, and a feeling of “this is exactly what I needed today.”

This afternoon, under the soft golden sun, I found myself craving something quick, soulful, and satisfying. I ended up making this humble with my mom but flavorful eggplant rice, paired with cool cucumber raita and a side of crispy potato chips—a trio that reminded me so much of school tiffin days and weekend lunches at home. My mom made this with me and I recorded this. 

The brinjal rice (or vangi bath, as it’s fondly called in many South Indian homes) is one of those dishes that transforms a simple vegetable into something irresistibly aromatic. Sliced brinjals are sautéed with caramelized onions, tossed in a warm, earthy spice blend, and mixed with fluffy basmati rice. A spoonful of homemade or store-bought vangi bath masala does all the heavy lifting.

The raita, just a mix of chilled curd, cucumbers, and a pinch of cumin, adds the perfect cooling contrast to the spiced rice. And those chips? Pure nostalgia. No pretense, just a bit of crunch that makes everything on the plate feel extra special.

What I love about meals like this is how they hit that perfect note between comfort and flavor—quick enough to pull together on a lazy afternoon, but satisfying enough to feel like you’ve treated yourself.

📌 Tip: If you want to save time, pre-make a small batch of the spice powder and store it for future rice dishes—it works beautifully with other veggies too.

Ingredients

  • For the rice:
    • 1 cup basmati rice (or any variety), cooked and cooled
    • 1 medium onion, finely chopped
    • 6–8 small brinjals or one big eggplant chopped finely, carrot chopped finely, peas
    • 2 tbsp oil (preferably sesame or sunflower)
    • 1/2 tsp mustard seeds
    • 1/2 tsp cumin seeds
    • A pinch of asafoetida (hing)
    • 1 sprig curry leaves
    • 1 tbsp chana dal
    • 1 tbsp urad dal
    • 1 medium tomato chopped finely 
    • Salt to taste
  • • GHEE to drizzle. Loved this Canadian ghee.


    Spice powder (or use ready-made vangi bath powder):
    • 1 tbsp chana dal
    • 1 tbsp urad dal
    • 1 tsp coriander seeds
    • 1/2 tsp cumin seeds
    • 1/2 tsp sesame seeds
    • 4–6 dried red chilies (adjust to taste)
    • 2 tbsp grated coconut (optional, fresh or desiccated)
    • 1/2 tsp cinnamon (or a small piece of stick)
    • 2 cloves


    Dry roast these ingredients on medium heat until aromatic and grind to a coarse powder once cooled.

Directions

  1. 🍳 Method:
    1. Cook the rice:
    Cook rice with a few drops of oil. Let it cool fully before mixing so it doesn’t get mushy.
    2. Prepare the masala powder:
    Roast and grind the ingredients listed above (or use store-bought vangi bath powder).
    3. Sauté the brinjals:
    Heat oil in a pan. Add mustard seeds and let them splutter. Add cumin, Chana dal, urad dal, hing, and onions. Sauté until golden.
    4. Add brinjal:
    Add the tomatoes, carrots , peas, brinjal and salt. Cook covered on low-medium heat until soft, stirring occasionally. Sprinkle a little water if needed. It takes good 8-10 mins
    5. Add spice powder:
    Once the brinjals are cooked, add 2–3 teaspoons of the spice powder and sauté for 2–3 minutes.
    6. Mix with rice:
    Gently fold in the cooled rice. Adjust salt and spice level as needed. Add a squeeze of lemon juice for freshness (optional). Add curry leaves and coriander leaves to garnish. Drizzle ghee on top.
  2. 🥄 Serving suggestions:
    • Pair with raita (like the cucumber one in your image), papad or chips.
    • You can add roasted peanuts or cashews on top for extra crunch.

🌶️Spicy Chili Peanut Noodles 🍜

Kicking things up with spicy olive oil from @maisonorphee and a creamy peanut sauce that clings to every strand of noodle. Bold, nutty, spicy, and satisfying in every bite! Perfect weeknight comfort food.
I saw the spicy police oil from maison prphee and had to try them. Tasted so good on my noodles. I tried them on my pizza and morning toast which was delicious as well.

Ingredients

  •  Noodles (any type – ramen, rice, or wheat)
    • 2 tbsp peanut butter (smooth or crunchy)
    • 2–3 garlic cloves, minced
    • 1–2 green chilies, finely chopped
    • 1–2 tsp red chili flakes (adjust to heat preference)
    • 1 tbsp soy sauce
    • 1 tbsp Maison Orphee Spicy Olive Oil
    • 1/2 tsp onion powder
    • 2 tbsp noodle water (reserved from boiling noodles)
    • 1 tbsp peanuts, crushed or whole (for crunch)
    • 1 tsp sesame seeds (plus more for garnish)
    • Fresh coriander leaves, chopped (for garnish)

Directions

  1. 1. Cook the noodles:
    Boil noodles as per package instructions. Reserve a few tablespoons of the noodle water before draining.
    2. Make the sauce:
    In a bowl, mix:
    • Peanut butter
    • Soy sauce
    • Onion powder
    • Red chili flakes
    • Noodle water (to thin it slightly)
    • green chillies
    • garlic 

    3. Sauté aromatics:
    In a pan over medium heat, add the spicy olive oil.

    4. Combine:
    • Add the heated olive oil to the pan of sauce. Add the noodles as well.

    • Toss everything together until noodles are well coated.
    5. Garnish:
    • Sprinkle crushed peanuts and sesame seeds.
    • Add fresh coriander leaves on top.

    Optional Add-ins:
    • A dash of spicy olive oil for that extra kick
    • Stir-fried veggies or tofu for a fuller meal

One pot Mushroom biryani recipe

This is my first option if I have mushrooms at home so let the world know this… 😉! 

I know and I have heard this from my loved ones that “Biryani” can never be vegetarian. However, I am a vegetarian and this is the only biryani I have tasted 😀 so this is a delicacy to me. I am here in Costa rice for a break last few days. Obviously, new place and beautiful. However, Vegetarian options are not great unless I cook here. If I go to the the main town I might get some option. So, for now all I am having –> rice, beans and plantain. At this point, I choose peace over food and humans which is unlike me. So, no complaints!

* Oil – 2 tbsp
* Bay leaf – ½
* Cinnamon – 1 thin piece
* Cloves – 3
* Cardamom pods – 2
* Onions – 1, big, sliced thinly
* Mint – 1 cup, chopped finely
* Coriander leaves – 1 cup, chopped finely
* Garlic – 6, very finely chopped
* Ginger – 2 cloves, finely chopped
* Green chilli – 8, slit
* Tomato – ½, sliced
* Turmeric powder – ¼ tsp
* Biryani masala – 1 tsp
* Red Chilli powder –1 tbsp
* Mushrooms chopped (crimini, or another favourite variety) – 2 cups
* Salt – 2.5 tbsp or as per your taste.
* Basmati Rice – 2 cups
* Water – 4 cups
* Coriander leaves – 1 tbsp, chopped

Directions

  1. Take a big wide pan, add oil on medium heat, and add the spices like bay leaf, Cinnamon, cloves, cardamom pods, and sauté for a minute. Add the cumin seeds, then the onions, mint, coriander leaves, ginger, garlic, green chillies, and fry for two minutes with a bit of salt.
  2. Then add tomatoes with mushrooms, turmeric powder, biryani masala, red chilli powder and salt.
  3. Mix well and sauté for two minutes.
  4. Then add the rice and mix well.
  5. Add the water to it and close the pan in medium high heat for ten minutes.
  6. After ten minutes, change it to low for ten minutes.
  7. Finally, keep it closed for ten minutes after removing from heat.
  8. Garnish with coriander leaves.
  9. Notes: Remove chilli powder if you find it spicy.

For National Pasta Day this month, I’m making a spicy Indian Tikka Masala Pasta with
@forpastalovers . This is the best pasta you will ever have when you have no time to cook yet you want to have something delicious with a kick! I always liked recipes which are close to my heart.


This is one recipe that my mom made for me when I was a kid. It has a fusion traditional touch
to it. She used to make this with no cheese and I added some cheese to it. If you love pasta, and if you love Indian food, you need to try this recipe!

Tikka Masala Pasta

Ingredients

  • Olive oil – 2 tbsp
  • Garlic – 7 cloves, chopped finely
  • Ginger – 2 inch, chopped finely
  • Green chilli – 2, chopped finely
  • Tomato sauce – 4 tbsp
  • Tikka masala powder – 1 tbsp
  • Salt – 1 tsp
  • Heavy cream – 1/4 cup
  • Italpasta Artisan Penne Rigate Pasta – 500 gms
  • Parmigiano-Reggiano cheese – 4 tbsp
  • Coriander leaves – 2 tbsp, chopped finely

Directions

  1. Boil pasta for 12 minutes on medium heat. Strain and set aside. Keep the pasta water.
  2. In medium heat, add olive oil, onion, ginger, garlic, and green chillies.
  3. Add tomato sauce, pasta water, tikka powder and salt. Sauté for 2 minutes.
  4. Add heavy cream and mix well.
  5. Then add cooked pasta and mix well.
  6. Garnish with coriander leaves and cheese.

A vegetable stew using coconut and moong dal which is a very famous side dish for idlis and dosa from the Kumbakonam/Tanjore region of Tamil Nadu.

This is my friends’s recipe and it came out so good that I wanted to post the recipe on my website. My dad really loved it. He was telling me when he was in a town called “mayavaram” , he used to have it almost everyday with dosa/idli. Happy!

Ingredients

  • Moongdal – 1/4 cup
  • Aloo – 1 
  • Garlic 3 I add more 
  • Ginger 
  • Onion 1
  • To grind:
  • Coconut- 3 tbsp
  • Pottu kadalai- 1 tbsp
  • Poppy seeds -1/2 tbsp
  • Green chilli 2
  • Garlic 2

Directions

  1. Pressure cool moong dal with turmeric and aloo.
  2. In kadai add oil, cloves, cinnamon stick, sombu and bay leaves. Add thinly sliced onions. Add more garlic and green chilli. Add ginger garlic paste. Then cooked dal + half cup water. After that boils add aloo. After 2 mins add ground paste and salt to tast. 
  3. Boil for 5-7 mins and garnish with coriander leaves.

Mushroom Masala Quick Recipe

We all need quick recipes these days.

This is one of the quickest recipes I made one day as a side dish to poori. Came out good so thought will share it.

Typing a recipe after 45 days or so. My admin has been very kind enough to maintain my social media with all the content I gave her and responding timely on her messages. Thanks to her! She pushes me to provide her content on a timely manner when I hide from social media. I owe you a lunch, Girl!

Been some tough days that I can’t express with everything happening. Then, last few days was even more worse with Covid. Recovering…

Heard from my neighbor on Mercury Retrograde that this is all happening as Universe is telling me something. People who knows me know I don’t believe in all this.. But this is so strong with every day and nothing seems to work out! I am fed up and May be this is universe. At this point, no use blaming the universe and it is just me.

whatever… Life will go on… I will breathe like everybody else! 🙂

Ingredients

  • Cardamom, cinnamon stick, bay leaf – each 2
  • Mushrooms – 400 Gms
  • Onions – 200 gms
  • Green Chilli – 2, chopped
  • Garlic – 6, sliced.
  • Ginger – 1 inch, chopped finely.
  • Turmeric powder – 1 tsp
  • Coriander powder – 1 tsp
  • Mango powder – 1 tsp
  • CHilli powder – 1 tsp
  • Pepper powder – 1/2 tsp
  • Coriander leaves – 1 tbsp, chopped finely
  • Lemon juice – 1.5 tsp
  • Salt – 1 1/4 tsp

Directions

  1. 1. Chop Mushrooms, slice onion, Green chillies, Garlic and ginger.
  2. 2. In a pan with 1 tbsp of oil in medium heat, add 2 cardamom, cinnamon stick, 1 tsp cumin seeds, 1 tsp fennel seeds.
  3. 3. Add the chopped mushrooms, onion, green chillies, garlic, Ginger and salt. Saute for a few minutes until they get translucent. This will take about 4 minutes.
  4. 4. Add 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp mango powder and 1 tsp chilli powder.
  5. 5. Mix well and add 1/2 of water.
  6. 6. Close for 2-3 minutes. Then open and let the water evaporate for another 2 minutes or so.
  7. 7. Garnish with fresh grounded pepper, chopped coriander leaves and lemon juice.

Peanuts Masala Stuffed Eggplant/ Bharwan Baigan

Baby eggplants stuffed with peanuts and medley of spices and cooked till perfection. Vegan and gluten free!

Whenever I see baby eggplants in the store, I grab them. I love them as side rather than for curry like kuzhambu or sambar. I started to make this before few years when my friend said she tried it. I usually make the classic masala stuffed eggplant. I have already posted the recipe before. I wanted to try a different stuffing. Thought of making mint spices first, then went for a peanut coconut stuffing. It was really good. You should try it! 🙂

My mom has never made this, but my dad said my grandma used to make this often. I don’t make it often 😉 however when I make it I enjoy it as delicacy. I feel eggplant is a versatile vegetable and we could make a lot of dishes with it.

It taste great with dal fry, rasam or even with plan rice.

Peanuts Masala Stuffed Eggplant/ Bharwan Baigan

Ingredients
  • • Baby eggplant – 10
  • • Peanut oil/ sesame oil – 2 tbsp
  • • Curry leaves – 1 spring
  • • Green Chilli - 2, slit
  • • Dry Red chilli – 2, broken
  • • Salt- for taste
  • • Turmeric powder – ½ tsp
  • • Dry mango powder – 1 tsp

    To Roast & Grind:
  • • Red chilli dry – 4
  • • Peanuts – 3 tbsp
  • • Coconut – 3 tbsp grated
  • • Channa dal - 1 tbsp
  • • Urad Dal – 2 tbsp
  • • Fennel seeds – 1 tsp
  • • Coriander seeds – 1 tbsp
  • • Fenugreek seeds – ½ tsp
  • • Jeera – 1 tbsp
  • • Pepper - 2 tsp
  • • Tamarind – pinch
  • • Garlic cloves – 3
Instructions
  1. Dry roast the ingredients under "to saute and grind" and grind to a smooth paste adding little water with turmeric powder, salt and dry mango powder. Mix well and Set aside.

  2. Wash and slit the eggplants on top of it without removing the stalk. Cut till almost the end to stuff keeping the stalk.

  3. Stuff the ground masala in the slit brinjal as much as possible.
  4. In a kadai, add little oil, add curry leaves, broken red chillies and slit chillies. Now place the stuffed brinjal. Keep the flame medium - low. Simmer the flame and cover the kadai. Add 2 tbsp of water for it to get cooked. Try to keep them intact.
  5. Sprinkle the left over ground masala if any is left over and a little bit of salt.

  6. Keep turning for each 5 minutes and when all sides are roasted, switch off. It usually takes 20 minutes.
  7. Garnish with coriander leaves.

Senai kizhangu/ Fennel Elephant yam/Suran dry roast

Elephant foot yam, the name looks different right?. It is called so because the larger tuber resembles an elephant foot. It is also called as suran and senai kizhangu in Hindi and Tamil. This vegetable is good for health as contains a large amount of carbs used for vital energy, lowers bad cholesterol, and lowers blood pressure. This is my mom’s recipe. My mom does this in a style by slice them finely, marinating with turmeric and sambar powder, and pan roast with oil. Sometimes she even slices them thinly, marinate, fry it deep. It is called Yam chips 😀  Obviously that takes a lot of oil ! I used to prepare them as elephant yam grill and make them with trevti dal, rasam and curd rice.

Ingredients
  • • • • Elephant yam/ senaikizhangu – ½, peeled and sliced ~ 2 cups
  • • • • Oil - 2 tbsp
  • • • • Mustard seeds - ¾ tbsp
  • • • • Cumin seeds (Jeera) - 1 tsp
  • • • • Tamarind – 2 tsp ( 1 inch sized tamarind or pulp)
  • • • • Urad dal - 1 tbsp
  • • • • Curry leaves - 5
  • • • • Turmeric powder - 2 tsp
  • • • • Sambhar powder – 1 tbsp
  • • • • Chilli Powder – 1 tsp
  • • • • Sugar - 1 tsp
  • • • • Salt - to taste
Instructions
  1. • Wash Elephant yam and peel the outer layer totally. Slice them finely into small cubes.
  2. • Add turmeric powder, curry leaves, salt, sambar powder, chili powder, asafetida, tamarind and 1 tsp of oil. Marinate and keep aside for 10 mins.
  3. • Heat 1 tbsp of oil in a pan over medium heat, add mustard, after it crackles, add urad dal, and jeera.
  4. • Bring the heat to medium,now add the chopped raw elephant yam. Stir and sprinkle 1 tbsp of water, close the lid and cook for 5-7 minutes over medium heat.
  5. • Add 1 tsp of sugar and keep frying until the raw elephant yam gets roasted here and there in color. Change to low heat, it takes around 5-7 minutes. Switch off the flame.
Notes
1. Do not make the slice too thick then it won’t cook inside properly.
2. You can also deep fry them rather by doing them on the pan. But obviously, this is healthy.
3. Adding sugar makes retain the color and turns it crispy.

Seppankizhangu is also known as colocasia/arbi/taro root/chembu-kizhangu. I usually make it as roast by boiling but this one where I just peel and chop was my parents recipe. My mom said try it and you will love it! 🙂 and I totally loved it. And here I am sharing with you! Sometimes add it in yogurt curry (mor kuzhambu), once pan roasted and once have fried it. Everything tasted great but did not want to fry it anymore  made me guilty. So, here is my another recipe and it taste great with any rice, rasam,sambar and  I made it for one lunch for meals before two months and it tasted really good! It has some essential minerals like iron, copper, potassium, zinc. When you buy them, always buy fresh, medium sized firm ones. Arbi is very good in fiber and also good for the digestive system. It has zero cholesterol. It is heavy but and may cause bloating so addition of asafetida makes it easy to digest. I added tamarind as some kind souring agent to balance the sliminess and that sourness gives a different flavor.

Spicy Arbi Fry/ Seppankizhangu Roast

Ingredients
  • • • Arbi – 6 medium sized( 2 cups)
  • • • Oil - 2 tbsp
  • • • Mustard seeds - ¾ tbsp
  • • • Cumin seeds (Jeera) - 1 tsp
  • • • Tamarind – 2 tsp ( 1 inch sized tamarind or pulp)
  • • • Urad dal - 1 tbsp
  • • • Curry leaves - 5
  • • • Turmeric powder - 2 tsp
  • • • Sambhar powder – 1 tbsp
  • • • Chilli Powder - 1 tbsp
  • • • Sugar - 1 tsp
  • • • Salt - to taste
Instructions
  1. • Wash Arbi and peel the outer layer totally. Chop them finely into small cubes.
  2. • Add turmeric powder, salt, sambar powder, chilli powder, asafetida, tamarind and 1 tsp of oil.
  3. • Heat 1 tbsp of oil in a pan in medium heat, add mustard, after it crackles, add urad dal, curry leaves and jeera.
  4. • Bring the heat to medium,now add the chopped raw arbi. Sprinkle 1 tbsp of water, close the lid and cook for 5-7 minutes in medium heat.
  5. • Add 1 tsp of sugar and keep frying until the raw arbi gets roasted here and there in color. Change to low heat, it takes around 5-7 minutes. Switch off the flame.
Notes
Adding sugar makes retain the color and turns it crispy.

Ingredients
  • Colocasia/seppankizhangu/arbi – 10
  • Mustard seeds – ¼ tsp
  • Urad dal – 1 tsp
  • Curry leaves - few
  • Sambar powder – 3 tsp
  • Chilli powder – ½ tsp
  • Turmeric – ¼ tsp
  • Fennel powder – ½ tsp
  • Garlic – 2, crushed
  • Rice flour – 2 tsp
  • Asafetida - pinch
  • Salt – as needed
  • Sugar – a pinch
  • Oil – 2 tbsp
Instructions
  1. Wash arbi and pressure cook with ¾ cup of water and a tsp of turmeric powder and cook for 3 whistles or boil for 30 minutes.
  2. Peel the skin off and cut them in circles or rounds.
  3. Mix the arbi and add turmeric powder, rice flour, sambar powder, fennel powder, chilli powder, salt and asafetida and mix well.

  4. Heat 1 tbsp of oil in a pan in medium heat, add mustard, after it crackles, add urad dal,and curry leaves.
  5. Bring the heat to low, and mixed marinated arbi.

  6. Sprinkle 1 tbsp of water, close the lid and cook for 5-7 minutes.
  7. Turn in between to make sure it gets cooked evenly.
  8. Add a pinch sugar and keep frying until the arbi gets roasted here and there in color. Switch off the flame.
Notes
1. Don’t pressure cook for long and make it mushy.

Truly fancy, delicious, restaurant style, vegan dish in 10 minutes. This is a recipe which will come to your rescue when you haven’t planned a meal on a week day.

It is a great vegetarian /vegan dish for any day,especially when it takes only 10 minutes to make. If we are given a choice of preparing a delicious dish in 10 minutes for dinner, we would choose it without thinking. 🙂 Will we not ;)! Or Is it just me 😀

It is a great dish to entertain with. You can either serve it as an appetizer with tooth picks, or serve it as main dish with plain or fried rice. You can press it between two slices of bread for a healthy quick breakfast.

I am usually very content eating humble food on the weekdays. It is more regional food that I grew up or sometimes salads (if I am lazy to stand up in the kitchen or if I am guilty having too much of junk foods 😉 which is most times!). But on the weekends, I tend to make and love to experiment in the kitchen. It is because I have more time on the weekends, and also I wanted to make myself occupied and busy the weekends.I really don’t want to get bored or else my mind would go wander about all thoughts. J And top of all this, I love to eat and I get to that all weekend :)! So, I made this for the weekend when I had some leftover rice from Friday evening and wanted to finish it up on Saturday. I wanted to make something quick to just eat with the rice which is tasty and filling. I did not want to stand in the kitchen for a long time 🙂 I knew I had some plans of going out for dinner. 😀

This was quick, flavorful and I love the addition of garlic with skin! You can serve this with some soy sesame sauce dip. You can even use the same method and do the recipe with paneer or baby corn. You can even fry the tofu and toss in this spice mixture.

Spicy Garlic Soy Tofu in 10 minutes

Ingredients
  • Tofu – 500 Grams (Extra firm) (Chopped to bite size cube pieces)
  • Garlic – 7-8 cloves (don’t peel the skin)
  • Ginger – 2 inch
  • Dry red chillies – 8-10
  • White sesame seeds – 1 tbsp
  • Salt – 1 tsp
  • Soy sauce – 2 tsp
  • Sesame oil – 2 tbsp
  • Black Pepper powder (or crushed pepper) – 1 tsp
  • Chopped Green onions – to garnish
Instructions
  1. Place the chilis, Ginger, sesame seeds,salt and garlic (with skin) in a blender and pulse it for 3-4 times. It should not be a smooth paste and it should turn into a coarse paste.
  2. Heat oil in pan in medium to low heat, add the spice mix and fry for 30 seconds and add then add the soy sauce, pepper powder and tofu cubes.
  3. Toss well for the spices and soy sauce to coat the tofu well. Fry for 2 minutes or so, till the tofu turns slightly golden and crispy on the outside.
  4. Garnish with chopped green onions or sesame seeds.
Notes
1. You can even fry tofu and add this to the spice mixture if you want it very crispy.
2. You can skip the ginger if you do not like it.
3. You can use paneer, baby corn for the same recipe.
4. If you can’t take this spicy tofu, use 4-5 chillies.

 This delicious layered biryani is fragrant, flavorful, and filling. Carrot, beans, peas and potatoes cooked in gravy of spicy yogurt and served with basmati rice topped with cashews and fried onions.

 If you think biryani is hard to make, I will surely say NO. It surely takes a bit of time. But all the hard work in the kitchen will be well worth the end result.  An authentic vegetable biryani is always slow cooked on “dum”. It is an ancient technique of cooking on dum as they believe it brings out its uniqueness and originality. This is done by cooking in steam by not allowing the steam to pass. The food gets cooked on its own steam and juices on slow fire and infuses the flavors and aroma of the herbs and spices in the food.

It is a perfect Sunday lunch idea. I made this for the weekend and I just loved it. I usually like to make veg biryanis on a weekend for the time it takes and also 😉 it makes my weekend complete after having a meal like this 🙂 I made veg biryani, garlic tomato raita, curd rice and papad. I love to have biryanis with mirchi ka salan. It feels like you are in India if you have so :). The last time I had restaurant biryani was before three years in India. I am very choosy. If I don’t like it, I really don’t go to that place again. I loved the kailash parbat biryani 🙂 I am drooling as I type! :D! Actually I am drooling at my biryani 😉 picture and want to make it again 😉 even though I had it only yesterday 😀 There will be no one saying  No to biryanis, let it be vegetable biryani, chicken biryani, shrimp biryani, palak biryani ,chickpea briyani, potato biryani and so on!  My favorite is this :)!

Restaurant Style Vegetable Biryani Recipe

Ingredients
  • For the masala:
  • Cashew nuts – 6
  • Khus khus (White poppy seeds) – ½ tbsp.
  • Cumin seeds/ Jeera – ½ tbsp.[


    For fried onions:
  • Onions – ½ cup, 2 small onions, sliced thinly
  • Cashewnuts - 6
  • Oil – to fry


    For layering:
  • Mint leaves – 1 tbsp, chopped
  • Coriander Leaves – 1 tbsp, chopped
  • Saffron – ½ tsp dissolved in ½ cup warm milk
  • Ghee – 2 tbsp


    For the rice:
  • Basmati rice – 2 cups
  • Salt – 2 tbsps
  • Cumin Seeds/ Jeera – 1 tbsp


    For the vegetables:
  • Oil – 1 tbsp
  • Bay leaf – ½
  • Cinnamon – 1 thin piece
  • Cloves – 3
  • Cardamom pods – 2
  • Ginger garlic paste – 2 tsp
  • Full fat yogurt – ½ cup
  • Garlic – 4 whole
  • Green chilli – 2, slit
  • Biryani masala – 1 tbsp
  • Red Chilli powder –1 tsp
  • Mint – ½ cup, chopped finely
  • Coriander leaves – ½ cup, chopped finely
  • Fresh beans – ½ cup, Chopped 1 inch thin
  • Carrot – 1 cup, chopped 1 inch thin
  • Peas – ½ cup
  • Potato – 2, chopped as cubes
Instructions
  1. Grind the cashew, poppy seeds and cumin seeds into a smooth paste, using as little water as possible. Set aside.
  2. Deep fry the sliced onions when it is hot. Don’t overcrowd the oil. When the onions turn light brown, remove from oil and drain on paper towel. The fried onion will crisp up as it drains. Also fry the cashewnuts till golden brown. Set aside.
  3. Wash the rice and soak in water for twenty minutes.
  4. Meanwhile, take a big wide pan, add oil in medium heat, add the spices like Bay leaf ,
  5. Cinnamon,Cloves,Cardamom pods ,sauté for a minute.Add the blended paste, to it add the green chillies, ginger garlic paste and garlic and fry for a minute.
  6. Then to it add the red chilli powder, biryani powder, mint, coriander leaves and sauté them well.
  7. Add the yogurt and mix well. I always move the skillet away from the heat when adding yogurt which prevents it from curdling.
  8. Now after returning the skillet back to the stove, add the vegetables and salt and ½ cup water and mix well. Cook for 10 minutes.
  9. When you do the seventh step, take another big pan, add thrice the cup of rice you use, and boil it. When it is boiling high, add the rice, salt and jeera and mix well. After 7 minutes exact or when the rice is 80% done. Switch off and drain the rice.
  10. The vegetables would have cooked by now and water would have drained.
  11. Now, the layering starts. To the vegetables, pat and level it. Add the drained hot rice on the top of it. Garnish with fried onions, ghee, mint, coriander leaves and saffron dissolved in milk.
  12. Cover the dish and bake in a 350f oven for 15 minutes or till the cooked but not mushy. Or cook in the stove medium heat for 12 minutes and lowest heat for 5 minutes. And switch off. Mix and serve hot!
Notes
1. If you are cooking in oven, do make sure to cook in a big oven safe pan and cover it tight and then keep in oven for the final step.
2. You can skip biryani masala if you don’t have and add just garam masala (1 tsp and red chilli powder – 3 tsp instead of 1 tsp)
3. If it is spicy in the end, squeeze some lemon, it will reduce the heat and enhance the flavors also.
4. Vegans can leave the ghee and replace yogurt with coconut milk
