Nurtured - Vegan Biryani-2I am naming this biryani as ‘Nurtured’!

This delicious layered biryani is fragrant, flavorful, and filling. Carrot, beans, broccoli and potatoes cooked in spicy gravy and basmati rice.

 

 

Why do I call this Nurtured? – Biryani surely takes a bit of time. However, all the hard work in the kitchen will be well worth the end result.  An authentic vegetable biryani is always slow cooked on “dum”. It is an ancient technique of cooking on dum as they believe it brings out its uniqueness and originality. This is done by cooking the rice and veggies under steam by not allowing the steam to pass. The food gets cooked on its own steam and juices on slow fire and infuses the flavors and aroma of the herbs and spices in the food.

I made this biryani last week. I usually make a lot of vegetable biryani. I know meat eaters always mention if biryani it should be only Lamb! Who cares? I like it this way and I am making it as vegan biryani! 😀

I think the only difference between vegetable biryani and vegan biryani I make is the ghee..ah actually even sometimes I add yogurt!

You can always add the vegetables you like to it like edamame, cauliflower, peas or anything you fancy.

Ingredients
  • For the rice:
  • • Basmati rice – 3 cups
  • • Oil – 1 tsp
  • • Water – 8 cups
  • • Salt – 1 tbsp
  • • Cumin Seeds/ Jeera – 2 tsp
  • • Cardamom
  • For the vegetables:
  • • Oil – 2 tbsp
  • • Bay leaf – ½
  • • Cinnamon – 1 thin piece
  • • Cloves – 3
  • • Cardamom pods – 2
  • • Onions – 1, big, sliced thinly
  • • Mint – 1 cup, chopped finely
  • • Coriander leaves – 1 cup, chopped finely
  • • Garlic – 6, very finely chopped
  • • Ginger – 2 inch, finely chopped
  • • Green chilli – 8, slit
  • • Tomato – ½, sliced
  • • Turmeric powder – ¼ tsp
  • • Biryani masala – 1 tsp
  • • Red Chilli powder –1 tbsp
  • • Fresh beans – ½ cup, Chopped 1 inch thin
  • • Carrot – 1 cup, chopped 1 inch thin
  • • Broccoli – 8 florets
  • • Potato – 2, chopped as cubes
  • To garnish:
  • • Coriander leaves – 1 tbsp, chopped
  • • Lemon juice – 1 tbsp
Instructions
  1. Wash the rice and soak in water for ten minutes.
  2. Meanwhile, take a big wide pan, add oil in medium heat, and add the spices like Bay leaf, Cinnamon, Cloves, Cardamom pods, and sauté for a minute. Add the cumin seeds, then the onions, mint, coriander leaves, ginger, garlic, green chilles and fry for two minutes with a bit of salt.

  3. When onions are sautéing in the pan, Take another pan with water, salt and boil it. When it is boiling (which takes around 2 minutes, add the rice, cardamom, cumin seeds). Let it boil for 6-7 minutes exact or when the rice is 80% done.

  4. Meanwhile on the biryani pan, when onions are well sautéed, add tomatoes and turmeric powder. Sauté for a minute.

  5. Then to it, add the vegetable, red chilli powder, biryani powder, salt and sauté them well for 4-5 minutes.
  6. The vegetables would have been slightly cooked by now.

  7. Now, the layering starts. To the vegetables, pat and level it. Drain the rice and add the drained hot rice on the top of it.

  8. Stove top: I cook in stovetop, cover the pan with aluminium foil, add a weight to it (like mortar and pestle) and cook in 6 minutes in medium flame. Then turn into medium low heat for 35 minutes. Switch off and add coriander leaves to garnish with some lemon juice when it is served.

  9. (Or)
  10. Oven method: Cover the dish and bake in a 350f oven for 15 minutes or till the cooked but not mushy. Or cook in the stove medium heat for 12 minutes and lowest heat for 5 minutes. And switch off. Mix and serve hot!
Notes
1. If you are cooking in oven, do make sure to cook in a big oven safe pan and cover it tight and then keep in oven for the final step.
2. You can skip biryani masala if you don’t have and add just garam masala (1 tsp and red chilli powder – 3 tsp instead of 1 tsp)
3. If it is spicy in the end, squeeze some lemon, it will reduce the heat and enhance the flavors also.

Potato Carrot Pierogies

PierogiesI don’t know if you have ever had a chance to try Polish pierogi, but they have become one of my favorite winter comfort foods.

I know it doesn’t look as the best beautiful pierogie but they are incredibly tasty. Crunchy, sweet and rich!

Wanted to try this for a long time and Mission accomplished. I have made this vegan by using vegan butter and vegan cheese. You can make it either way. Added caramelized onion for extra savory flavor and sweetness.

The original pierogi is made using just potatoes and I made it with carrot.Russians call their dish pielmieni and in Poland, they call them as Ruskie (which is what we call them in Poland).

Storing it: You can boil them now, then seal up and freeze that you wont be eating right away. When you are ready for them, thaw and cook them in butter.

Tip: Seal it tight and press the edges super tight together.

Side: It tastes great with sour cream.

Potato Carrot Pierogies

Ingredients
  • Dough:
  • All purpose flour – 500g
  • Warm Water – 230 ml
  • Salt – 1.5tsp
  • Olive oil – 2 tbsp
  • Filling:
  • Potatoes – 600g
  • Cheese - 1 cup (vegan cheese if vegan)
  • Salt – 1.5 tsp
  • Onion – 1 big, chopped finely
  • Ground pepper – 1 tsp
  • Grated nutmeg – 2 pinches (optional)
  • Fry:
  • Butter – 1 tbsp (vegan butter if vegan)
  • Garnish: Chopped chives and caramelized onions.
Instructions
  1. Filling:
  2. In a pan, heat olive oil; gently fry the chopped onion until they are golden brown.

  3. Place the potato into a medium pot and cover with water. [You can use pressure cooker or instant cooker. ]Place the pot over high heat and bring the water to a boil. Allow cooking until the potato is fork tender, about 15 minutes. Don't overcook it.

  4. Drain the potato into a colander and return it to the pot. Mash the potatoes with a potato masher and stir in the milk, pepper, cheese, and nutmeg and caramelized onions. And salt.
  5. Dough:
  6. In a mixing bowl, combine flour, olive oil and salt. Mix well and add water slowly. Once combined roughly, start using your hands to knead. Add more water if you can’t bring it together. If you think you added more water, bring in more flour.

  7. Kneaded dough will take 5-10 mins and set it aside. After kneading the dough should become more smooth and elastic. But not sticky!
  8. Cover and rest it for 30 minutes.
  9. After dough had been rested, add some flour to the rolling surface, grab some dough and roll it out into 1-2 mm thin surface. Make it as thin as you can, tastier the dumplings.
  10. With upside down glass, cut out circles in the dough.

  11. Place a heaped teaspoon of the filling in the centre of each circle, fold the circle in half and press the edges of the semi-circle together with your fingers.
  12. Try to finish dumplings on a lightly floured surface and cover them with a damp kitchen towel while making the rest so that they don’t dry out.
  13. Bring a large pot of water to a boil and add the pierogies (work in batches if it gets too crowded). Cook the pierogies for 3-4 minutes, until they float, removing each one with a slotted spoon and transferring to a plate as it begins to float, fish them out with a slotted spoon and place on a clean plate. Put a new batch in until you have cooked them all.

  14. OPTIONAL but THIS IS MY FAVORITE! - Heat up a little olive oil / butter in a pan and place the cooled-down (they should be cold!) dumplings in the pan. Turn them after they’ve browned on one side.

Flavourful and comforting fried rice using mushrooms ready in 30 minutes! 🙂

I would suggest using a wok to make this. There should be this fast and fried touch to this which happens by cooking in the wok. I have this pan which is not wok but still does the job 🙂 If you have celery, use it when you add mushrooms 🙂 It gives great flavour.

 

It is super quick to make this recipe. I literally made this in 30 minutes. If you have pre-cooked rice, this will take just 15 minutes. I once tasted when my sweets 🙂 cooked for me 🙂 and I made it later once with my own twist after that. I don’t know 🙂 I liked the taste a lot. Special..!

Fried rice is so versatile. You can add any vegetables to it. You can even make this with leftover rice. You can add eggs to it if you eat eggs :). I am sure it will taste great with eggs too. It is very important to make the rice grainy for fried rice. If the rice turns sticky, we won’t get it perfectly. You can use different colour capsicum to add more colour to the rice. It is very simple, the only thing to do is chop the everything thinly sliced. Make sure to use nice good quality basmati rice, as it’s the star ingredient here.

Quick Mushroom Pepper Fried Rice

Ingredients
  • Oil – 2 tbsp (approx)
  • Red chilli Flakes – 2 Tsp
  • Garlic – 5, Thinly sliced
  • Ginger – 2 inch, sliced
  • Onion – ¾ cup, thinly sliced
  • Green chilli – 2 long, thinly sliced
  • Capsicum/ Bell pepper – ½ cup, thinly sliced
  • Mushroom – 150gms, chopped or sliced
  • Soy sauce – 2 Tsp
  • Crushed pepper – 1 tbsp
  • Rice – 1.5 cups
  • Salt – as per your taste
  • Spring onions – 1 tbsp, finely chopped to garnish
Instructions
  1. Take a rice cooker with 2 tsp of oil, 1.5 tsp of salt, 1.5 cups of rice, 2.5 cups of water and cook it. You can cook this in a pan too. Open and let the rice get cool.



  2. Take a pan with 1 – 1.5 tbsp of oil in the medium to high flame, add red chilli flakes, garlic, ginger, green chillies, 1 tsp of salt and sauté for 30 seconds. Add onions with a bit of salt and sauté for 30 seconds.

  3. Add bell pepper, mushrooms, ½ tbsp of crushed pepper and sauté well for two minutes.


  4. Add soy sauce, rice and keep tossing every 20 seconds for 2- 3 minutes till the rice gets fried too.
  5. Add chopped spring onions to garnish and switch off.

Cauliflower Biryani/ Gobi Dum Biryani

cauliflower_biryani_gobiFamous Indian One pot meal cooked with spices coated cauliflower. Rich and flavorful 🙂 It is surely a festive dish and this is perfect to cook when you have guests over or make it for dinner parties

To be honest, it does take time to cook biryani than many easy 10 minutes food. I even don’t like to post time consuming recipes but it is so tasty that I could not resist myself not posting it. The best thing about biryani is that it tastes great even the next day and the day after. It will save you from cooking for next three days and it will never be like you are tasting leftover food! Awesome right?

I usually made a lot of biryani’s both meat and vegetarian. I have more than 10 biryani recipes in my website which surely elaborates that I am a biryani lover. This one was just made for me. No special occasion or anything. I totally loved it! I have a biryani collection recipes on my website with all biryani recipes.

Biryani’s are best to have plain or with just some yogurt side like cucumber raita, garlic tomato raita or sometimes with gravies like paneer makhanwala, mirchi ka salan. If you want you can make some vegetable biryani like this and make chicken dry roast, chicken pepper curry or chicken 65.

To make it vegan, replace ghee with oil.

Ingredients
  • For onion paste:
  • • Onions – 2 small onions, chopped roughly
  • • Garlic – 6 whole
  • • Green chilli – 2, slit
  • • Ginger – 1 inch
  • • Khus khus (White poppy seeds) – ½ tbsp.
  • • Fennel seeds – 1 tbsp


    For Tomato Paste:
  • • Mint – ½ cup, chopped finely
  • • Coriander leaves – ½ cup, chopped finely
  • • Tomatoes – 1, chopped roughly


    For fried onions:
  • • Onions – ½ cup, 2 small onions, sliced thinly
  • • Cashewnuts - 6
  • • Oil – to fry


    For the rice:
  • • Basmati rice – 2 cups
  • • Salt – 2 tbsps
  • • Cumin Seeds/ Jeera – 1 tbsp
  • • Ghee – 1 tsp


    For the cauliflower:
  • • Oil/ghee – 3 tbsp
  • • Bay leaf – ½
  • • Cinnamon – 1 thin piece
  • • Cloves – 3
  • • Cardamom pods – 2
  • • Biryani masala – 1 tbsp
  • • Red Chilli powder –1 tsp
  • • Cauliflower – 1 medium
  • • Saffron – ½ tsp dissolved in ½ cup warm milk
  • lemon to squeeze at the end
Instructions
  1. Precooking:
  2. Grind the Onions, cashews, fennel seeds, poppy seeds, cumin seeds,green chillies, garlic and ginger into a smooth paste using as little water as possible. Set aside.
  3. Grind the tomato, mint and coriander into a smooth paste. Set aside.
  4. Wash the rice and soak in water for twenty minutes.
  5. Boil the water and add the cauliflower florets with little salt. Boil for 4 minutes and not more than that. Drain, wash with cold water and keep it aside.
  6. (Optional)Deep fry the sliced onions when it is hot. Don’t overcrowd the oil. When the onions turn light brown, remove from oil and drain on paper towel. The fried onion will crisp up as it drains.


    Cooking:
  7. Take a big pan, add thrice the cup of rice you use, and boil it. When it is boiling high, add the rice, salt and jeera and mix well. After 7 minutes exact or when the rice is 80% done. Switch off and drain the rice. add the a tsp of ghee on top and mix a bit for them not to stick.

  8. Take another big wide pan, add half & half oil and ghee in medium heat, and add the spices like Bay leaf, Cinnamon, Cloves, Cardamom pods, saute for a minute. Add the blended onion paste, and fry for few minutes in medium flame. It completely needs to get sauteed well around 5-7 minutes till the raw smell leaves. (Vegans use oil instead of ghee)
  9. Then to it add the blended tomato paste with turmeric powder and saute well. Add the red chilli powder, biryani powder and sauté them well till they ooze out little oil.

  10. Add the cauliflower and sauté well. Cook for 5 minutes till they mix up well and get little roasted.
  11. Now, the layering starts. To the sautéed cauliflowers, pat and level it. Add the drained hot rice on the top of it. Garnish with fried onions (optional), ghee, mint, coriander leaves and saffron dissolved in milk (optional).



  12. Cover the pan with a tight lid or foil with some heavy weight like mortar and pestle on top, keep it in medium flame for 10 minutes and then keep it in low flame. Keep an open pan (like a dosa or crepe pan, place the biryani pan on top of it and cook it for 30 minutes)

  13. Squeeze some lemon and switch off. Mix and serve hot!
Notes

Another quick 10 minute sandwich for breakfast 🙂 . Do not skip breakfast!

You think you don’t have enough time to make Breakfast? Most of our mornings goes by rushing that we tend to skip Breakfast.



This is one of my favorite sandwiches and I made a mini one with it. My sister loves paneer and I made this for her :)! Easy, quick and tasty one. Takes about 10 minutes to get ready and are super fresh and delicious. Bored with your toast? Spread this delicious homemade paneer tofu mix sauce on your bread and enjoy! This bread toast is easy to fix up with less effort for kids. You can sandwich them between tortilla or roti/naan .

You can even make this as full sandwich rather than mini sandwiches. We can even have this as an appetizer, snack, pot luck party dish. Sanwiches always in my favorite food list for my mornings. If I am bored with oats, I just go and make my own spread sandwich :)!

Mini Paneer/Tofu Corn Sandwich

Ingredients
  • Paneer/ Firm tofu – ½ cup crumbled
  • Corn (frozen) – ¼ cup
  • Big onion – ½ finely chopped
  • Ginger Garlic paste – ½ tsp
  • Green chilli – 1, finely chopped
  • Capsicum/ Bell Pepper – 2 tbsp, finely chopped
  • Tomato ketchup – 2 tsp
  • Red chilli powder – ½ tsp
  • Chaat masala – 1 tsp
  • Garam Masala Powder – ¼ tsp
  • Coriander leaves – 1 tbsp finely chopped
  • Salt – to taste
  • Oil – 2 tsp
Instructions
  1. Heat oil in a pan; add onions, green chilli, ginger garlic paste and sauté till golden brown.
  2. Add capsicum and sauté for a minute, then add chilli powder, garam masala powder, tomato sauce and salt. I would give a quick stir, it should not be too dry or too saucy.

  3. Then add corn and paneer/tofu crumble. Mix well.
  4. Cook for a minute, garnish with coriander leaves and switch off.

  5. Toast the bread (with little butter or plain) on both sides. Chop the sides, cut them into mini sizes, Spread the filling on the top side, chop and squeeze some lime juice to garnish. Close the sandwich and fix a tooth pick to it.
Notes
1. I used frozen corn, you can use fresh corn , boil for few minutes, dry and keep it.
2. Replace corn with any veggies like peas or carrot.

Trevti means three. So this recipe is basically with any three dal recipes. Dal can be made in different ways using different dal like Normal simple dal, dal tadka, dal fry using different dal. I really love to make dal because it is simple and very comforting food. I make sure I make them once in a week atleast. I usually make them on a weekday because it just atkes 10 minutes for me in a kitchen. I pressure cook them, meanwhile I chop some veggies for side dish. You can replace the dal with any dal you want. the idea is to make using three dal/lentils. There are different types of dal like garlic dal, 5 dal-pancharatna dal, peanut surati dal,khatti meethi dal,spinach dal and so on.

Served with some potato sukka, potato roast, rice, paratha, roti and so on.

 

Other Dal recipes: Chana dal paratha, Tomato dal rasam, Sambar-spicy lentil soup, Garlic dal and peanut dal.

Trevti dal/ Three Lentil Dal

Ingredients
  • Tuvar dal/pigeon pea lentils – ⅓ cup
  • Moong dal/split mung lentils – ⅓ cup
  • Chana dal/ Split Bengal gram lentils – ⅓ cup
  • Green chillies – 4, chopped roughly
  • Turmeric – 1 tsp
  • Salt – as needed (around 1 tbsp)
  • Water – 3 cups for pressure-cooking the lentils
    [For tempering]
  • Ghee /oil – 1 tbsp
  • Mustard seeds– ¼ tsp
  • Cumin seeds – 1 tsp
  • Red chilli – 2, broken
  • Asafetida/hing – pinch
  • Tomato – 1, chopped finely
  • Red chilli powder – 1 tsp
  • Amchur powder – 1 tsp
  • Sugar – a pinch
  • Dry methi leaves – ½ tbsp, crushed
  • Coriander leaves - 1 tbsp finely chopped for garnish
  • Lemon – squeeze a little for garnish
Instructions
  1. Add washed tuvar dal,moong dal and chana dal, green chillies, turmeric and little salt in the pressure cooker with water.
  2. Pressure-cook the lentils for 8 whistles till you get a mashable smooth consistency.
  3. When it’s pressure-cooked, open the cooker and check if the consistency is ok. If not mash it, add little water and boil for two minutes. Or leave it.
  4. Heat ghee/oil in a pan. Ghee gives great flavors to dal but. Sometimes I use oil too. Temper it with mustard seeds and wait till it crackles. Then add cumin seeds,asafetida, red chillies till they change color. Now add chopped garlic, ginger and tomato. Sauté them till they are free from raw flavor and mushy.
  5. Switch off the flame, add red chilli powder, amchur powder, sugar and dry methi leaves. Stir and pour the entire tempering on the dal.


  6. Garnish with chopped coriander and squeeze lemon. Check for salt and serve this gujarati trevti dal tadka hot with steamed rice and a potato fry. You can also serve this with rotis/naan.

BreadToast-3This is one of my favorite open faced sandwiches. Easy, Quick and tasty one. Takes about 10 minutes to get ready and are super fresh and delicious. Bored with your toast? Spread this delicious homemade vegetables sauce on your bread and enjoy!

I have had this bread toast in India in a bakery called “Iyengar bakery”.  If you have tried this in that bakery, you will surely say how tasty it is. I got a lot of request for sandwich recipes. It is just I try lot of sandwiches recipes in the morning but never take pictures as they have become a day to day morning routine. I mainly did this recipe as I wanted to make in pan rather than sandwich makers. You can keep this as open sandwiches or closed sandwiches. I left it as open sandwich to remind me the bakery sandwich. Do not add water to the vegetables and make it mushy, the vegetables should be crunchy in this. I still remember, my dad used to get this sandwich from a bakery when I was doing my third grade in Madurai. My sister was in sixth grade only, but still she used to get me this after school for me with her pocket money 🙂 ! This bread toast is easy to fix up with less effort for kids. I made this on a weekend with some avocado and banana coffee milkshake.

Vegetable Bread Toast Sandwich:

Ingredients
  • Bread slices – 4
  • Oil – 1 tsp
  • Cumin seeds – ¼ tsp
  • Onion – 1, finely chopped
  • Green chilli – 1, finely chopped
  • Tomato – 1, finely chopped
  • Carrot – 1, finely chopped/ grated
  • Bell pepper/capsicum – 1 small, finely chopped
  • Salt – 2 tsp
  • Red chilli powder – ¼ tsp
  • Chaat masala – ¼ tsp
  • Tomato ketchup – ¾ tsp
  • Butter – to toast bread
  • Coriander leaves – 2 tsp, finely chopped to garnish
  • Lemon juice – 1 tsp, to garnish
Instructions
  1. In a pan, add oil and add in the cumin seeds and then add the chopped onions and green chillies. Sauté till the onions are light golden brown.
  2. Add in the carrots, bell pepper, chopped tomatoes,chaat masala, red chilli powder, salt and the tomato ketchup.
  3. Sauté in a low flame for 5 minutes and switch it off.
  4. Place a pan and when the pan is hot, toast the bread with little butter on both sides.
  5. Spread the filling on the top side and garnish with coriander leaves. Squeeze some lemon/lime juice to garnish.
Notes
1. You can leave it as open or closed sandwiches.

2. Do not add water and make the vegetables mushy. The vegetables should be crunchy here,

3. You can add any vegetables of your choice like potatoes, cabbage, peas or beans.

Baby Corn Makhani

Baby Corn Makhani is a great side dish for rotis and mild pulao or jeera rice. Baby corn is a wonderful crunchy vegetable and easily gets blended with any masala. I usually make baby corn Manchurian or baby corn fry. But this time I wanted to make baby corn gravy with no frying.  Makhani gravy is usally made up of pureed tomatoes, ginger, garlic, red chilli powder and cream.

I made this with a simple roti, jeera rice and cucumber raita. Generally, baby corn is cooked or par boiled before using in any dish. But I used a can one, eve n otherwise I just wash and cook it without boiling. That crunchy texture gives great taste to the dish. If you prefer your baby corn more cooked and softer, I’d recommend cooking it in a pot of boiling water until soft before adding to the gravy.

I usually love baby corn in my pizza. And baby corn is a good source of folate or folic acid. It is rich in proteins, vitamins and iron. I used to make baby corn capsicum masala or baby corn peas masala. But after doing my paneer makhanwala, I got inspired and did this recipe.

You can always taste the ingredients a bit if you don’t have that specific ingredient at home. You can do this recipe with tofu,chicken,potato instead of baby corn. Never be afraid to try new flavors in your cooking. I always believe in that.

Vegan Note: Avoid cream and butter. 🙂 we have cashew paste inside already.

Ingredients
  • For the gravy:
  • Onion - 1 Chopped
  • Tomato - 2 Chopped
  • Garlic - 5 Chopped
  • Ginger - ½ inch Chopped
  • Cinnamon - 1
  • Cardomon - 2 whole
  • Cashews - 7 whole
  • Almond - 7 whole
  • Jeera - 1 Tbsp
  • Salt - As needed
  • Water - 2 cups

    [other]
  • Unsalted Butter - 2 Tbsp
  • Baby corn – 10 , slit.
  • Chilli Powder - 1 Tbsp
  • Green Chilli - 1 Slit
  • Kasturi Methi - 1 tbsp
  • Garam Masala Powder - 1 tsp
  • Sugar - ½ tsp
  • Water - 1½ cups
  • Cream - 1 tbsp

    [Garnish]
  • Coriander - 1 tbsp, chopped finely
  • Cream - 1 Tbsp
  • Salt - As needed
Instructions
  1. Mix the chopped onions, tomatoes, cashews, almonds, garlic, ginger, cinnamon, cardomon, jeera, salt and water in a pan.
  2. Cook for about 15- 20 minutes on a medium flame till everything gets cooked. Allow this to cool.
  3. Then add everything in a blender. Blend them into a smooth paste with not even small pieces of cashews on it.
  4. Heat butter in the same pan.
  5. Add the jeera, blended makhani paste and stir well.
  6. Add chilli powder. (If you want rich color, you can add kashmiri chilli powder. I used normal one)
  7. Stir well &sauté the masala on a medium flame till the butter ooze out. It has to be sautéed really well till butter ooze out.
  8. Add washed baby corn, methi leaves, chilli powder,cream,water and boil for ten minutes.
  9. Switch off the flame. Garnish with coriander, ginger and cream.
Notes
1. You can use julienne ginger to garnish as well.
2. Close the lid when you add baby corn and water at the end as it will splash out some gravy outside as it boils.
3. You can also fry baby corn in butter/oil before you add them.
