Eggplant rice

June 4, 2025 by Suki Leave a Comment

🌿 Simple Pleasures: Eggplant Rice, Raita & Chips on a Sunny Afternoon

here’s something deeply comforting about a plate of home-cooked food that doesn’t try too hard—just honest flavors, familiar aromas, and a feeling of “this is exactly what I needed today.”

This afternoon, under the soft golden sun, I found myself craving something quick, soulful, and satisfying. I ended up making this humble with my mom but flavorful eggplant rice, paired with cool cucumber raita and a side of crispy potato chips—a trio that reminded me so much of school tiffin days and weekend lunches at home. My mom made this with me and I recorded this.

The brinjal rice (or vangi bath, as it’s fondly called in many South Indian homes) is one of those dishes that transforms a simple vegetable into something irresistibly aromatic. Sliced brinjals are sautéed with caramelized onions, tossed in a warm, earthy spice blend, and mixed with fluffy basmati rice. A spoonful of homemade or store-bought vangi bath masala does all the heavy lifting.

The raita, just a mix of chilled curd, cucumbers, and a pinch of cumin, adds the perfect cooling contrast to the spiced rice. And those chips? Pure nostalgia. No pretense, just a bit of crunch that makes everything on the plate feel extra special.

What I love about meals like this is how they hit that perfect note between comfort and flavor—quick enough to pull together on a lazy afternoon, but satisfying enough to feel like you’ve treated yourself.

📌 Tip: If you want to save time, pre-make a small batch of the spice powder and store it for future rice dishes—it works beautifully with other veggies too.

Have you tried making brinjal rice before? What’s your go-to nostalgic comfort meal? I’d love to know in the comments!

Serving Size:
2
Time:
15
Difficulty:
30 mins

Ingredients

  • For the rice:
    • 1 cup basmati rice (or any variety), cooked and cooled
    • 1 medium onion, finely chopped
    • 6–8 small brinjals or one big eggplant chopped finely, carrot chopped finely, peas
    • 2 tbsp oil (preferably sesame or sunflower)
    • 1/2 tsp mustard seeds
    • 1/2 tsp cumin seeds
    • A pinch of asafoetida (hing)
    • 1 sprig curry leaves
    • 1 tbsp chana dal
    • 1 tbsp urad dal
    • 1 medium tomato chopped finely
    • Salt to taste
  • • GHEE to drizzle. Loved this Canadian ghee.

Spice powder (or use ready-made vangi bath powder):
    • 1 tbsp chana dal
    • 1 tbsp urad dal
    • 1 tsp coriander seeds
    • 1/2 tsp cumin seeds
    • 1/2 tsp sesame seeds
    • 4–6 dried red chilies (adjust to taste)
    • 2 tbsp grated coconut (optional, fresh or desiccated)
    • 1/2 tsp cinnamon (or a small piece of stick)
    • 2 cloves

Dry roast these ingredients on medium heat until aromatic and grind to a coarse powder once cooled.

Directions

  1. 🍳 Method:
    1. Cook the rice:
Cook rice with a few drops of oil. Let it cool fully before mixing so it doesn’t get mushy.
    2. Prepare the masala powder:
Roast and grind the ingredients listed above (or use store-bought vangi bath powder).
    3. Sauté the brinjals:
Heat oil in a pan. Add mustard seeds and let them splutter. Add cumin, Chana dal, urad dal, hing, and onions. Sauté until golden.
    4. Add brinjal:
Add the tomatoes, carrots , peas, brinjal and salt. Cook covered on low-medium heat until soft, stirring occasionally. Sprinkle a little water if needed. It takes good 8-10 mins
    5. Add spice powder:
Once the brinjals are cooked, add 2–3 teaspoons of the spice powder and sauté for 2–3 minutes.
    6. Mix with rice:
Gently fold in the cooled rice. Adjust salt and spice level as needed. Add a squeeze of lemon juice for freshness (optional). Add curry leaves and coriander leaves to garnish. Drizzle ghee on top.
  2. 🥄 Serving suggestions:
    • Pair with raita (like the cucumber one in your image), papad or chips.
    • You can add roasted peanuts or cashews on top for extra crunch.

Tomato rice

Quick & Tasty Tomato Rice
A simple, flavorful South Indian-style tomato rice made with ripe tomatoes, spices, and cooked rice. Perfect for a quick lunch or dinner—fragrant, tangy, and ready in minutes! I have used ghee to make this recipe. Coconut milk is a key ingredient also.

I posted this recipe via Instagram with a reel and had millions of views so thought of sharing this recipe here.

Ingredients:

• 2 tbsp Ghee

• 1 cup basmati rice (cooked and cooled)

• 2 medium tomatoes (chopped)

• 1 medium tomato blended

• 2 cardamom, 2 cloves

• 1 small onion (sliced)

• 1 green chili (slit)

• 5 garlic

• 3/4 cup coconut milk

• 1/4 tsp turmeric powder

• 1/2 tsp red chili powder

• 1/2 tsp garam masala

• 1/4 tsp fennel seeds

• 1/4 tsp cumin seeds

• 8-10 curry leaves

• Fresh coriander leaves (chopped, for garnish)

• Salt to taste

Instructions:

1. Prep: Cook 1 cup of rice, then spread it out to cool (keeps it fluffy).

2. Tempering: In a pan, heat ghee. Add mustard and cumin seeds, letting them splutter.

3. Sauté: Add curry leaves, sliced onions, and green chili. Sauté till onions turn golden.

4. Flavor Base: Add garlic. Cook until the raw smell disappears.

5. Tomato Masala: Add chopped tomatoes, tomato paste, turmeric, chili powder, and salt. Cook until tomatoes soften and oil releases. Add coconut milk and cook it closed for two minutes

6. Combine: Add cooked rice to the pan. Gently mix to coat rice in masala.

7. Garnish & Serve: Sprinkle garam masala and fresh coriander. Serve warm with raita or chips!

I am here in Costa rice for a break last few days. Obviously, new place and beautiful. However, Vegetarian options are not great unless I cook here. If I go to the the main town I might get some option. So, for now all I am having –> rice, beans and plantain. At this point, I choose peace over food and humans which is unlike me. So, no complaints!

Mushroom Masala Quick Recipe

May 24, 2022 by Suki 1 Comment

We all need quick recipes these days.

This is one of the quickest recipes I made one day as a side dish to poori. Came out good so thought will share it.

Typing a recipe after 45 days or so. My admin has been very kind enough to maintain my social media with all the content I gave her and responding timely on her messages. Thanks to her! She pushes me to provide her content on a timely manner when I hide from social media. I owe you a lunch, Girl!

Been some tough days that I can’t express with everything happening. Then, last few days was even more worse with Covid. Recovering…

Heard from my neighbor on Mercury Retrograde that this is all happening as Universe is telling me something. People who knows me know I don’t believe in all this.. But this is so strong with every day and nothing seems to work out! I am fed up and May be this is universe. At this point, no use blaming the universe and it is just me.

whatever… Life will go on… I will breathe like everybody else! 🙂

Cauliflower Masala/ Gobi Masala

February 8, 2022 by Suki Leave a Comment

This is a simple and quick recipe that can be made in one pot with the least amount of cooking time. The delicious flavors from the cauliflower, when combined with spice powders along the onions brings out a rich texture and flavors to the curry.
There are many variants to this recipe where it can be made with thick gravy, but this recipe is a dry version of it.

This week I went to work after a long long vacation from work. Staying home, eating, sleeping, working out and repeating was not that bad. I made this yesterday for a quick lunch for myself. To be honest, not a great fan of cauliflower but I liked it with roti. Cauliflower has many nutrients and high in fiber. I am trying to take lots of fiber and iron intake and this helps if it is tastes good.Obviously I love fried gobi but tedious and unhealthy.

February 1, 2022 by Suki Leave a Comment

A spinach curry which is a comfort food and staple curry every week at my home.
Anyone who knows me would know I have been having spinach every three days once in the last 2 years or so. I have less iron and ferritin in my body so this spinach really helps. Or I believe it helps. I have started to love spinach recipes recently.

This is something that my mom made for me when I was back home. It’s a staple for us to have spinach every other day. I guess for all the junk food i was eating the last few years, my childhood healthy food saved me. Otherwise I would have not had this strength.

You can make this with any spinach you want.

Mushroom Vegetable Chow Mein

April 22, 2020 by Suki Leave a Comment

Mushroom Chow mein-5

Mushroom Chow mein-5Crispy noodles with mushrooms and spinach!

Do you know if you want lo mein and chow mein?!! Chow mein means crispy noodles and lo mein are soft boiled noodles.

When I know I want noodles from a take out, I always want the crispy ones.  The only issue for me is I don’t find vegetarian chow mein to order easily. I don’t eat eggs so it is even harder. So, I had to buy eggless chow mein and make this. My nephews love this too. They just love noodles.

Okay No more blah blah blah today. For some reason, I do not feel like typing much. So let me go straight to the recipe below.

I added spinach, mushroom and bell pepper this time. You can always add snap peas, broccoli, bok choy or garlic chives.

Mushroom_cauliflower_Biryani-2

Famous Indian One pot meal cooked with spices coated fried cauliflower. Rich and flavorful.

It is surely a party dish and this is perfect to cook when you have guests over or make it for dinner parties. However, I made it just for myself and ate. That is who I am. I love to treat myself when I am down and eat the whole plate. Food is the therapy to make us relieved from all the stress we have.

I used mushrooms in the recipe however it is optional. I had it so wanted to finish it. I made carrot raita as side and loved that as well.

Biryani’s are best to have plain or with just some yogurt side like cucumber raita, garlic tomato raita or sometimes with gravies like paneer makhanwala, mirchi ka salan. If you want you can make some vegetable biryani like this and make chicken dry roast, chicken pepper curry or chicken 65.

My fav Biryani recipes : restaurant style Vegetable biryani, Mushroom biryani, paneer biryani, chicken homestyle dum biryani, restaurant style lamb biryani

To make it vegan, replace ghee with oil.

Instructions
  1. CAULIFLOWER 65:
  2. Mix everything under cauliflower 65 and keep aside.
  3. Heat oil and deep-fry those cauliflower 65 beauties and keep aside.
  4. RICE & MASALA:
  5. Wash the rice and soak in water for ten minutes.
  6. Meanwhile, take a big wide pan, add oil in medium heat, and add the Oil, ghee and then the spices like Bay leaf, Cinnamon, Cloves, Cardamom pods, and sauté for a minute. Add the cumin seeds, then the onions, mint, coriander leaves, ginger, garlic, green chilles and fry for two minutes with a bit of salt.

  7. When onions are sautéing in the pan, Take another pan with water, salt and boil it. When it is boiling (which takes around 2 minutes, add the rice, cardamom, cumin seeds). Let it boil for 6-7 minutes exact or when the rice is 80% done.

  8. Meanwhile on the biryani pan, when onions are well sautéed, add tomatoes and turmeric powder. Sauté for a minute.
  9. Then to it, add the mushrooms (optional), red chilli powder, biryani powder, salt and sauté them well for 4-5 minutes.
  10. The mushrooms would have been slightly cooked by now.

  11. Now, the layering starts.
  12. To the mushrooms pat and level it. Add half portion of cauliflower 65.
  13. Drain the rice and add the drained hot rice on the top of it. Drizzle the rose water.
  14. Stove top: I cook in stovetop, cover the pan with aluminum foil, add a weight to it (like mortar and pestle) and cook in 6 minutes in medium flame. Then turn into medium low heat for 35 minutes. Switch off, add the another half portion of cauliflower 65 and add coriander leaves to garnish with some lemon juice when it is served.

  15. (Or)
  16. Oven method: Cover the dish and bake in a 350f oven for 15 minutes or till the cooked but not mushy. Or cook in the stove medium heat for 15 minutes and lowest heat for 5 minutes. And switch off. add the another half portion of cauliflower 65, mix and serve hot!
Notes
1. If you are cooking in oven, do make sure to cook in a big oven safe pan and cover it tight and then keep in oven for the final step.
2. You can skip biryani masala if you don’t have and add just garam masala (1 tsp and red chilli powder – 3 tsp instead of 1 tsp)
3. If it is spicy in the end, squeeze some lemon, it will reduce the heat and enhance the flavors also.
