Chicken_Karahi-4Chicken Karahi is traditional spiced tomato based gravy that is arguably the most popular dish in Pakistan (Lahore). Karahi is a circular, thick and deep cooking pot like wok and originally was cooked in that. Karahi is like kadai or chatti in tamil. Lot of people adds onions to bring sweetness to it. There is a difference of opinion on this from me as I cook it with just spices and tomatoes only which brings that rustic color to it.

I like that there are not too many spices involved.

 Serve with hot rice, chicken biryani, ghee rice or Indian bread like naan, roti.

CHICKEN KARAHI

Ingredients
  • • Chicken – ½ kg, cut into cubes. (Boneless/with bone works)
  • • Oil/Ghee (clarified butter) – ½ cup
  • • Bay leaf – 1
  • • Clove – 1
  • • Cinnamon stick – ½ inch
  • • Green Cardamom – 2
  • • Ginger garlic paste – 1.5 tbsp
  • (or)
  • Garlic – 3, crushed. Ginger – 2 inch, crushed
  • • Tomatoes – 2 (large)
  • • Water – ½ cup
  • • Yogurt – ¼ cup
  • • Red chilli powder – 1 tsp
  • • Coriander cumin powder – 1 tsp
  • • Pepper powder – ½ tsp
  • • Green chillies – 4
  • • Water – 1 cup
  • • Salt – 2 tsp
  • • Garnish:
  • • Cilantro – 2 tbsp, finely chopped
  • • Ginger - 1 inch, Julienne cut
Instructions
  1. HEAT; MEDIUM HIGH HEAT
  2. Crush ginger and garlic using mortar-pestle. Or blend in a blender. You can use ginger garlic paste.
  3. In a pan over medium high heat, add oil.
  4. Once oil is hot, add the bay leaf, clove, cinnamon stick and green cardamom.
  5. Add the chicken, salt and ginger garlic paste.
  6. Let it get slightly brown on few pieces (pink→white→ white with mild brown roasted pieces)
  7. HEAT: LOW HEAT
  8. Add rough chopped tomatoes , 1 cup water and close the lid. Turn the heat to low
  9. After 10 mins, open and mix well. The tomatoes at this point will be mashed when we mix.
  10. Add yogurt, red chilli powder, coriander cumin powder, pepper powder and green chillies. Mix well. Close the lid.
  11. Let it cook for 12 minutes in low heat.
  12. Open the lid, at this point all the water would gone and the gravy would have oozed out oil.
  13. Now add the ginger and cilantro. Add lime juice if you had also.
  14. Close the lid for 2 minutes and serve with hot rice or Indian bread like naan/roti.

Do you know if you want lo mein and chow mein?!! Chow mein means crispy noodles and lo mein are soft boiled noodles.

When I know I want noodles from a take out, I always want the crispy ones.  The only issue for me is I don’t find vegetarian chow mein to order easily. I don’t eat eggs so it is even harder. So, I had to buy eggless chow mein and make this. My nephews love this too. They just love noodles.

Okay No more blah blah blah today. For some reason, I do not feel like typing much. So let me go straight to the recipe below.

I added spinach, mushroom and bell pepper this time. You can always add snap peas, broccoli, bok choy or garlic chives.

Mushroom Vegetable Chow Mein

Ingredients
  • • 3 tablespoons, canola oil
  • • 16-ounce chow mein noodles (Used eggless)
  • • 3 Green chillies, slit
  • • 6 cloves garlic, chopped finely
  • • 3 inches, ginger chopped finely
  • • 200 grams, mushrooms
  • • 200 grams, spinach
  • • 100 grams, carrot, slit
  • • 2 tsp, salt
  • • Sauce:
  • • 1.5 tbsp Dark soy sauce
  • • 1 tbsp mushroom sauce
  • • 2 tsp sriracha sauce
  • • 1 tsp sugar
  • • 1 tsp, crushed black pepper
Instructions
  1. Boil noodles as per instructions in the package. Usually 2 minutes in boiling water with some salt. Keep ½ cup of noodles boiled starch water when it is almost done boiling. Turn off. Drain the noodles and keep it aside.
  2. In a small bowl, whisk together the ingredients in the sauce.

  3. Heat 1.5-tablespoon canola oil in a large skillet or wok over medium high heat.
  4. Add noodles and cook, stirring constantly, until golden brown and crispy, stirring every few seconds for about 3-5 minutes. Remove the noodles from the pan and set aside.

  5. Heat remaining 1.5-tablespoon oil in medium heat in the skillet. Add green chillies, garlic, ginger, carrot, spinach, and mushrooms, salt and cook, about 3-4 minutes.

  6. Then add the sauce mixture and noodles starch water, Mix well and let them boil for 30 seconds.
  7. Stir in noodles until well combined, about a minute.

  8. Garnish with chives if you have or enjoy as it is like me.

About butter egg curry

Is there a rule that it should always be butter chicken? I don’t think so. So, I made this butter egg curry instead 🙂 and I have even made butter mushroom curry and it taste great. The main ingredients are butter, cashews and a good garam masala I would say for this recipe. Eggs are staple at my home. If I am running out of time, I make eggs in some form and the family/friends are happy. I know most people have eggs for breakfast. However, I make eggs for lunch and dinner like curries or dosa (Indian crepes) with eggs. I love making Indian food and I crave Indian food always. If not, the next would be Mexican and pizza. Recently after all the vacations and work stress, I am cooking a lot of Indian to just make me happy at home. Holidays are coming up which means lots of fun and also we are always busy and we’re always short on time. So, I wanted to post some recipe which is fancy but quick to make.

Butter Egg Curry

Ingredients
  • EGGS – 4
  • Oil – 1 Tablespoon
  • Butter – 1 Tablespoon
  • Onion – 1 Medium, chopped finely
  • Garlic – 3 cloves, minced or crushed
  • Fresh ginger – 1 inch, minced or crushed
  • Cashews – 8
  • Tomato – 2 small
  • Garam masala – 2 teaspoon
  • kashmiri Chilli powder – 1 tablespoon (if you can’t take spice much, reduce to 2 tsp)
  • Cumin powder– 1 teaspoon
  • Coriander powder– 1 teaspoon
  • Black Pepper powder – ¼ tsp
  • Salt – 1 tsp
  • water - ½ cup
  • Yogurt – 3 tbsp
Instructions
  1. Boil the eggs : Heat a small pot and add the eggs with water just to cover them. Boil for 15 mins and take the shells off. Keep it aside. Cut them into halves (or). Slit the eggs here and there for the spices to get in.
  2. Meanwhile, Heat a large skillet or medium saucepan over medium-high heat. Add the oil, butter, garlic, ginger and onions and cook them down until onions are lightly golden, about 3-4 minutes.
  3. Meanwhile, blend tomatoes and cashews together.




  4. Add the tomato cashews paste, garam masala, chilli powder, cumin powder, coriander powder, black pepper powder, salt and cook for 5-6 minutes or until everything is cooked through.
  5. Add the Yogurt,water and simmer for 6 minutes stirring occasionally.






  6. If the consistency is in a curry form (if not, add water), add the eggs and simmer for 1-2 minutes and switch off. (Serve over Basmati rice or with naan.)

This is a simple mushroom fry that will entice your sense. Pepper gives depth and immense flavour to this dish.

You absolutely require few ingredients to prepare this recipe, which remain not the case for most Indian recipes.I made this recently. It was extremely splendid to taste and quick to make. I wanted to share the recipe right away. I have a feeling that if I make recipes with pepper, it’s a hit and people are loving it. May be its true:)

Enjoy it with plain hot rice or Indian bread like roti or naan. Or make it with Indian spicy tomato rasam.

Mushroom Pepper Fry in 25 minutes

Ingredients
  • • • Mushroom- 300gms
  • • • Capsicum/Bell Pepper – 1, medium sized, finely sliced
  • • • Oil – 2 tbsp
  • • • Whole Red Chilli – 2, broken
  • • • Cumin seeds– 1 tsp
  • • • Onion - 1 cup, 1 finely sliced
  • • Garlic – 5, finely sliced
  • • • Ginger – 2 inch, sliced
  • • • Turmeric powder - 1 Tsp
  • • • • Salt – 2 tsp or as per your taste
  • • • Coriander leaves – 1 tbsp, finely chopped
  • • • Water – 100 ml

    To Roast and grind:
  • • • Pepper - 1 tbsp
  • • • Fennel seeds - 1 tbsp
Instructions
  1. • Dry roast the ingredient under "to roast & grind” in medium to low flame for 45 seconds. Cool them, grind them together and keep it aside.

  2. • In a pan, heat oil in medium flame, when it is heated, add red chillies, cumin seeds and when it’s roasted for 5 seconds, add onion and a bit of salt and sauté till golden brown.

  3. • Now add ginger, garlic and sauté for few seconds.
  4. • Add the mushroom, capsicum, turmeric, pepper fennel blended powder and sauté well for a minute

  5. • Lower the flame from medium a bit but don’t low it too much. It will take around 7-8 minutes for it to cook well. Don’t add water.

  6. • Keep sautéing it every 2 minutes. Add chopped coriander leaves and switch it off.
Notes
If you think the spice is high for you, reduce pepper by half.

Tomato_mushroom pasta-2One of my favourite 30 minute dinner recipes – warm and comfort!

It has a good portion of veggies so it is surely healthy and add spinach if needed. I made this with a side of radish cucumber salad. I somehow forgot to edit the pictures and finally got some time this weekend to sit with my lightroom. I should say probably because my mom is here and she takes care of the kitchen mostly so I have loads of time. Actually she takes care of the kitchen and also me. Its been long since she hugged me and slept, felt better. Going to miss this again..

Now back to the pasta story, I don’t make pasta a lot. However when I make I try to include mushrooms to it as I like it a lot. Most probably I make pasta because I don’t want to cook for long. So I tend not to take much pictures or when I am bored of rice. It is one of the quick dinner recipes. I like to make my dinner with lot of recipes to fill my plate which I don’t mind if it takes time, but if I make a single dish it means I am too tired to cook, so it should be quick for me.

You can use any kind of pasta for this. 🙂

Ingredients
  • Spaghetti – 300 g [or other pasta as per your dish]
  • Cherry tomatoes – 300 g, chopped into quarters
  • Mushrooms – 300g , sliced or cut into quarters
  • Olive oil – 2 tbsp
  • Garlic – 5 cloves
  • Chilli flakes – 1 tbsp
  • Salt - as per taste

    to garnish –
  • crushed pepper
  • and parmigiano reggiano– 2 tbsp
  • basil leaves - 1 tbsp
Instructions
  1. Put the pasta onto cook with salt. Once the pasta is cooked, then drain and keep aside.
  2. Keep a pan , add the olive oil to the pan with garlic and slowly heat the pan.
  3. When the pan is hot with garlic without it gets brown, add the red chilli flakes and sauté for few seconds.
  4. Now add the mushrooms, tomatoes with salt to it until it becomes soft for 8 minutes.
  5. Add the drained pasta to it and mix well.
  6. Garnish with some grated parmigiano reggiano, basil leaves and crushed pepper to it.

Spicy Honey Garlic Salmon in foil

It’s loaded with garlic, sweet and heat that tastes a million times better than take-out. Spicy, crispy, sweet with ginger and garlic flavor. Truly finger licking salmon, and also one of those dishes that don’t require too much standing nor spending time in the kitchen. You can serve it with veg fried rice, rice noodles, or simple sesame noodles, or even some plain rice or quinoa. This is an easy dish you must try in summer. It is one of the easy dinner recipes that you can make without standing much on kitchen. Kids would love it and surely not only kids. I have few more Chinese Asian Inspired recipes that you can look on.

I have not cooked salmon many times but I think and believe the best and facile way to make salmon is by cooking in foil.  The flavors will steep right in, leaving us with the most flavorful and tender salmon ever. If you want a quick, easy and a fancy dinner, just go for this. You can make it for someone special and you can make it quick and spend some time with him/her. Let it be for a date night, game night, pot luck and I would say this salmon is the best to go for!

 I placed this on a bed of salad and it  was perfect for a healthy quick dinner. And salmon is totally healthy, I have heard it promotes joints, reduces inflammation and improves the  memory.

Spicy Honey Garlic Salmon in foil

Ingredients
  • Salmon Fillets – 4 (around 5 ounce)
  • Sesame seeds & chopped coriander leaves – for garnish


    For sauce:
  • Brown sugar – 2 tbsp
  • Lemon Juice – 1 tbsp
  • Dijon Mustard – 1 tbsp
  • Honey – 4 tbsp
  • Sodium soy sauce – 2 tbsp
  • Rice vinegar – 1 tbsp
  • Ginger – 1 tbsp, freshly grated
  • Sriracha – 1 tsp
  • Red chilli Flakes – 1 tsp
  • Garlic – 3 cloves, minced
  • Oregano – ¼ tsp
  • Kosher salt – to taste
  • Freshly ground black pepper – to taste
  • sesame oil – 2 tbsp
  • Lime zest – 1
Instructions
  1. Preheat oven to 375 degrees F. Line a baking sheet with foil. Pat the salmon dry with a paper towel.
  2. In a small bowl, whisk ingredients under “the sauce”.
  3. Dip each piece salmon into the sauce and place in the prepared baking sheet. Spoon the leftover mixture over the salmon.
  4. Fold the sides of the foil over the salmon, cover it completely and seal the packed closed.
  5. Now place into oven and bake for about 15- 20 minutes until cooked through.
  6. Open the packed and broil for 2 -3 minutes for it to get caramelized and slightly charred.
  7. Serve hot by garnishing with chopped coriander leaves and sesame seeds.

Pepper Paneer Do pyaza

paneerpyaaz-8Paneer or cottage cheese cooked in a rich, creamy and mildly spiced onion based gravy.

Paneer is an Indian cottage cheese, do is double and pyaza is onion. It is paneer curry with twice the amount of onions. I have seen so many different ways to do this recipe, some add tomatoes to it and some don’t. And some mince onions ,some dice onions, some blanche onions and add to the recipe. I guess there is no specific recipe. I saw sanjeev kapoor recipe and it was done on a dum( slow cooking) but there was no chilli powder or bell pepper added to it. I guess everybody has their own way to do this 🙂 So, I did this recipe adapting from all recipes I knew. And I totally loved it. It was perfect for parathas and  peas pulao.

Onion based recipe sounds crazy as most of our recipes have onions to it. When I started cooking, I knew most of my recipes with just onion and garlic in it. But in this recipe, it is mainly onions. The onions are added in two different ways for different taste and texture. I added one as a fried onion, blended it and other as diced onions. This is semi dry kind of gravy.

For my non-Indian readers, Paneer is a type of fresh cottage cheese that can be made easily at home.  Paneer has a milky flavor on its own, so it taste best when paired with strong spicy flavor like curries or tikka. This is a cheese that won’t melt like mozzarella or cheddar will. We can add them on any curry, or crumble them into flat breads like roti. Or even add them to kebabs and the cheese will keep its shape and chewy texture. I like making paneer at home. But sometimes i do buy them outside if I am very indolent. But I am sure home-made paneer is more hygienic and it saves a lot of money as well.  Here is the recipe to make homemade paneer.

After a month, I am posting this recipe. I had lot of personal commitments to work as we all have some 🙂 once in a while. I was off this Monday, and I made this with some parathas and ghee rice. It made my day! And I clicked the pictures and posting it now.

Ingredients
  • • Oil – 1 tbsp
  • • Spices – Cardamom – 1, bay leaf – 1, star anise – 1, clove -1
  • • Cumin/Jeera - ½ tbsp
  • • Onions - 1 (diced in a medium size)
  • • Mint – 2 tbsp, finely chopped
  • • Coriander leaves – 1 tbsp, finely chopped
  • • Chilli powder – ½ tbsp
  • • Crushed pepper – 1 tbsp
  • • Garam masala - 1 tsp
  • • Kasuri methi leaves – 1 tbsp, crushed
  • • salt - 1½ tbsp (or as per your taste/ or add it after the gravy is ready also)
  • • Green Bell pepper – 1, diced ( I used both green & red to make it colorful)
  • • Paneer cubes - 15 cubes
  • • Yogurt – 2 tbsp
  • • cooking cream - 1 cup
  • • Coriander - to garnish


    To grind:
  • • Onions – 1, fried.
  • • Chillies - 3 (chopped roughly)
  • • Ginger – 1 inch
  • • Garlic - 5
Instructions
  1. Blend everything under “to grind”.

  2. Heat a pan in medium flame. Add some oil, cumin, onions, and salt. Sauté them till they are translucent. You can add bell peppers in this step also.

  3. Now add the blended paste and bell peppers and sauté for few seconds. Now add the yogurt, mint leaves, coriander leaves, chilli powder, crushed pepper, garam masala, Kasuri methi leaves. Mix well and sauté for a minute.

  4. Add ½ cup of water and close the lid for 4-5 minutes.

  5. Now add the cream and paneer. Add ½ cup of water again and mix gently. Close it and let it simmer for 5-7 minutes

  6. When you see oil oozing out on the top,switch off and garnish with coriander leaves.

Notes
1. Cooking cream gives a rich flavor, so you should add it. Don’t skip it. You can use milk if you don't have cream
2. My salt amount was perfect. But if you want to add more or less, you can adjust as per taste.
3. I wanted it to be colorful, so used green and red bell peppers. You can use any colors or just one.

Garlic Creamy Mushroom Spaghetti

I am not a great mushroom lover. But when I just toss them with garlic and butter, I can have the whole bowl. 😀 that garlic and butter is a deadly combination to mushroom. It elevates the mushroom taste. So I add them to my quesadilla, curries, white curry, tacos, pasta, pizza and everything now.

I used spaghetti but you can use any kind of pasta you fancy. And you can also use whole wheat or any kind 🙂 it is going to be yum. And you can always use any kind of mushrooms for this. Sometimes I add wine to my sauce, it gives surely a unique taste ;). And I mostly add spinach to it. But this time, I wanted to make something quick and wanted to make something with few ingredients that is available.

You wont be able to stop yourself from this scrumptious cream mushroom pasta.  The best part in this is that it is so quick and easy to make. I would say one of the best weekday dinner recipes. You can add some sauted chicken to it if you want to. The best thing about pasta is that you can create your own recipe with your favorite ingredients.

 

Most recipes of pasta, I add cheese to it but this was so good and creamy that I felt it is not necessary. But if you want you can add some goat cheese or parmesan cheese.

Garlic Creamy Mushroom Spaghetti

Ingredients
  • Pasta – spaghetti – 6 ounces

    For Mushrooms:
  • Butter – 2 tbsp
  • Garlic – 2 cloves, minced
  • Mushrooms – 14 ounces, sliced


  • For Sauce:
  • Butter – 2 tbsp
  • Garlic – 2 cloves, minced
  • Milk – 1.5 cups
  • Olive oil – 1 tbsp
  • Whole wheat flour – 2 tbsp
  • Salt and pepper to taste

    To garnish:
  • Cream or milk – ¼ cup
  • Fresh parsley – ¼ cup
Instructions
  1. Cook the pasta according to the instructions on the package. Boil water and add the pasta with the salt needed for pasta. Then remove and run the pasta through cold water. And toss with a little oil to prevent sticking.

  2. Take a pan in medium high heat, melt 2 tbsp of butter. Add 2 cloves of garlic and sauté it for a minute. Then add the mushrooms and sauté for 7-8 minutes until golden brown and it should be soft. Set this aside.
  3. Add 2 tbsp of butter to the same pan in medium high heat, add the 2 cloves of garlic and sauté for a minute. Then add the flour, stir fry quickly for 30 seconds and make sure it does not get lumpy. Add the milk slowly and whisk it as you add.
  4. Season with salt and pepper. Let the whole mixture simmer until it thickens. Add olive oil and water when needed if you think the sauce is very thick.
  5. When you think it has got into nicely creamy texture, toss the sauce, pasta and mushrooms together.
  6. Top it with fresh chopped parsley and some crushed pepper just before serving
Notes
You can always use any kind of pasta you fancy.
