Kung Pao Turkey

This Kung Pao Turkey is a spicy, nutty and sweet sauce loaded with chunky veggies and turkey.

I make a lot of spicy dishes if you know me and I love having gallons of water after it. This is one of those dishes, but with a sweet touch. In my opinion, you can’t make this recipe without dried red chili, so definitely try getting your hands on them. They are usually found in the Latino or Asian grocery section. If you want to make it on the mild-spicy side then only add half of the dried red chilli. You can easily add your favourite vegetables like zucchini, green bell peppers, onions, broccoli, and baby corn along with the red bell peppers.

Serve it over steamed white rice, fried rice, or noodles.

Turkey is a great lean protein that greatly fits into go-to recipes like burgers, stir-fry and meatballs. This whole recipe took me 40 minutes to do, which serves about 4 meals with some rice. I have been collaborating with Think Turkey for almost a year for various recipes. Kung Pao Turkey

Ingredients
  • • 1 lb Turkey breast boneless and skinless, cut into small cubes
  • • ¼ cup cornstarch
  • • 1 tsp salt
  • • ½ cup canola oil
  • Stir-Fry
  • • ▢ 1.5 tbsp peanut oil
  • • ▢ 3 cloves garlic minced
  • • ▢ 1 tsp ginger minced
  • • ▢ 8 dried red chilies
  • • ▢ ¼ cup peanuts dry-roasted, unsalted
  • • ▢ 1 medium green bell pepper, cut into small ¾ inch cubes
  • • ▢ 1 medium red bell pepper, cut into small ¾ inch cubes
  • •
  • Kung Pao Sauce
  • • 2 tbsp dark soy sauce
  • • ½ cup vegetable broth - low sodium or no sodium added
  • 1 tsp cornstarch
  • Garnish:
  • ▢ 3 green onions thinly sliced
Instructions
  1. Prepare turkey: Toss the turkey with the ¼ cup cornstarch and salt, ensuring each turkey piece is covered in cornstarch.
  2. Fry the turkey: Heat oil and fry the turkey until golden brown. When finished cooking, drain and set turkey aside.
  3. Make Stir-Fry and Sauce: Add peanut oil to the wok and heat. Add Garlic, ginger and red chilli to the wok. Stir-fry for 30 seconds. Add green pepper, red pepper, and peanuts to it and sauté for a minute. Add soy sauce and mix well. Mix vegetable broth and cornstarch in a separate bowl and add to wok. In 20 seconds, you’ll notice the sauce start to thicken from the cornstarch.
  4. Add fried turkey to it , mix well and heat through. Stir in green onions and serve over rice or noodles.

Turkey Pepperoni Garlic Bread Toast

Time-saving cute mini turkey pepperoni pizzas that are packed full of flavour.

Not sure if I should call this pizza or toast.  The reason being is you can have this for breakfast, dinner or evening snacks.  Top with your favourite pizza ingredients and you’ll have your favourite kind of pizza style toast in no time. The pizza sauce can be store bought or homemade. I would suggest you use the Texas style garlic bread for this recipe to get to the best taste. The cute turkey pepperonis add the best flavour to the bread. Who can go wrong with turkey pepperoni, garlic bread, tomatoes and cheese?

You can do this recipe in Airfryer as well.  The same 375F for 6 minutes will do the job perfectly.

I have collaborated with Canadian turkey farmers and created this recipe.  When you think turkey you are supporting local farmers. Turkey is a great lean option to add to meals when you start doing meal prep. We can add turkey to different go-to recipes like burgers, meatballs and hotdogs.

Turkey Pepperoni Garlic Bread Toast

Ingredients
  • • 1 oz of turkey pepperoni (chopped into thin circles)
  • • 4 slices of frozen garlic bread (I used Texas toast style)
  • • 4 Tbsp pizza sauce (storebought or homemade)
  • • 1 Cup shredded mozzarella cheese
  • • 2 Tbsp chopped basil.
Instructions
  1. Preheat the oven to 375F.
  2. Wrap aluminum foil on a baking pan and spray with non-stick cooking spray. Place the garlic bread on the sheet.
  3. Now apply a little bit of pizza sauce to each slice of bread to cover the one side of the bread.
  4. Then top it with turkey pepperoni.
  5. Lastly, cover with cheese and chopped basil. Do this for every bread slice.
  6. Bake in the oven for 6-7 minutes or until cheese is melted.
  7. Serve it hot.
Notes
Add some red chilli flakes for extra spiciness.

Turkey Pepperoni Pizza Cups

Turkey_Pepperoni_Pizza_Cups-4Individual convenient cheesy turkey cups for rushed mornings or snacks! Savoury turkey, pizza sauce, herbs, eggs and cheese, these pizza cups are utterly delicious and moist!

You can use any type of flour you prefer, such as corn flour or wheat flour for this recipe. You can also use your favourite cheese like Gouda, Cheddar, Swiss or Parmesan.  I made these on a Sunday and they lasted  a week for breakfasts. These are perfect for a quick breakfast or a light afternoon snack. If you are feeding a crowd in the future, this recipe is so quick and easy to make!

Being in the Holiday Month, Turkey is a great option the whole family will love.  Turkey easily fits into go-to recipes like burgers, and meatballs, etc. I love exploring different ways to cook turkey like roasting, frying or cooking in the instant pot, which has been my favourite method so far.

The kids will love this twist on pizza night!! These cups are also great to serve alongside soup, pasta, as an alternative to biscuits, or as a slightly indulgent side for a salad supper.

Ingredients
  • • 1½ cups plain all-purpose flour
  • • 2 tsp baking powder
  • • 2 tsp salt
  • • 1½ cups milk
  • • 1 Tbsp chopped basil leaves
  • • 1 Tbsp chopped jalapeño (optional)
  • • 2 eggs
  • • 1 cup shredded mozzarella cheese
  • • ½ cup store-bought pizza sauce
  • • 1 cup Turkey Pepperoni, cut into small size slices
Instructions
  1. • Arrange a rack in the middle of the oven and preheat to 375°F. 190oC)
  2. Liberally grease your muffin pan with olive oil.
  3. • In a large bowl combine flour, baking powder and salt.
  4. • Next whisk in the milk, basil, jalepeno and eggs until combined.
  5. • Add about two tablespoons of batter to each muffin cup to fill it ¾ full. Add a layer of cheese followed by sauce, a few turkey pepperoni slices, then cheese again.
  6. •
  7. • Lastly, top with a few pepperonis. Repeat the process until you've filled all 12 muffin cups.
  8. • Bakefor , about 20-25 minutes, until lightly browned and puffed. Enjoy immediately!
  9. Top each pizza cupcake with as much additional cheese and pepperoni as you'd like to fancy it!

The sauce is so good you’ll want to use it as a topping on many recipes. This honey garlic turkey recipe is also easy to make.

I have had questions on cooking turkey and when it is done. The best way is to use a meat thermometer inserted into the thickest part of the turkey, without touching the bone.

A whole unstuffed turkey is cooked at 170F (77C)

Ground turkey (Burgers, cutlets, meatballs, sausages) at 165F

Cuts (thigh, wings, and breast legs) at 165F again.

Ingredients
  • FOR THE HONEY GARLIC SAUCE
  • • 3 cloves garlic, minced
  • • ½-cup honey, or more, to taste
  • • 2 tablespoons soy sauce
  • • 1-tablespoon cornstarch
  • • ¼-cup water
  • FOR THE TURKEY
  • • 1 cup all-purpose flour
  • • 1 teaspoon dried oregano
  • • ½ teaspoon paprika
  • • 1 teaspoon freshly ground black pepper
  • • 1 large egg, beaten
  • • 1 pound boneless, skinless Turkey breasts, cut into 3 inch cubes
  • • 2 teaspoon Kosher salt to taste
  • • 1 cup vegetable oil
  • • 1 tbsp coriander leaves chopped finely
  • • 1 tbsp crushed peanuts
Instructions
  1. In a bowl, mix the ingredients under the honey garlic sauce.
  2. In a large bowl, combine flour, oregano, paprika, black pepper, eggs, turkey breast and salt. Set aside for 3-4 minutes
  3. Heat vegetable oil in a large skillet over medium high heat.
  4. Working in batches, add half of marinated turkey, and cook until evenly golden and crispy, about 6 minutes on each side. Transfer to a bowl.
  5. Add the honey garlic sauce on top and mix well. Garnish with coriander leaves and crushed peanuts.

LO MEIN:

Do you know the difference between  lo mein and chow mein?!! Chow mein means crispy noodles and lo mein are soft boiled noodles.

When it comes to Chinese noodles, I love them both but for this recipe I have elected to make a delicious Turkey Lo Mein. I added spinach, mushroom and bell pepper this time. You can always add snap peas, broccoli, bok choy or garlic chives to this.

Ingredients
  • • 16-ounce chow mein noodles
  • • 2 tablespoons, canola oil
  • • 350 grams, Turkey Breast, cubed into 2 inches
  • • 3 Green chillies, slit
  • • 6 cloves garlic, chopped finely
  • • 3 inches, ginger chopped finely
  • • 100 grams, spinach
  • • 100 grams, bell pepper, sliced thinly
  • • 100 grams, mushrooms, chopped
  • • 2 tsp, salt
  • • Sauce:
  • • 1.5 tbsp Dark soy sauce
  • • 1 tbsp mushroom sauce
  • • 2 tsp sriracha sauce
  • • 1 tsp sugar
  • • 1 tsp, crushed black pepper
Instructions
  1. ) Boil noodles as per instructions in the package (Usually 2 minutes in boiling water with some salt). Keep ½ cup of the boiled starch water when it is almost done boiling. Turn off. Drain the noodles and keep them aside.
  2. ) In a small bowl, whisk together the ingredients in the sauce.
  3. ) Heat canola oil in a large skillet or wok over medium-low heat.
  4. ) Add turkey and roast for 12 minutes until golden brown and crispy, stirring every few seconds for about 3-5 minutes.
  5. ) Add green chillies, garlic, ginger, spinach, bell pepper, and mushrooms, salt and cook, about 3-4 minutes.
  6. ) Then add the sauce mixture and the starch water you set aside. Mix well and let them boil for 30 seconds.
  7. ) Stir in noodles until well combined, about a minute.
  8. ) Garnish with chives if you have or enjoy as it is.

This dish is silky smooth, creamy, ultra thick and is deep in flavor. It is a south Indian style Kurma made with coconut, turkey and green chilies. We always make kurma at our home as a side dish for naan, paratha, and any type of rice. It is best even with plain store bought sandwich breads. Trust me, it is!

I always like to make curries at home; they make our home smell with aroma. I like making kurma as it is easy and quick to prepare.

Pair it with: You can have this turkey kurma with hot rice, Jeera rice or with Indian bread like naan, paratha or parotta.

Ingredients
  • For the pressure cooker / instant pot
  • -250 grams Turkey
  • -1 onion, finely chopped
  • -1 Tomato, chopped
  • -2 sprigs curry leaves, chopped
  • -5 stalks mint leaves, chopped
  • -4 cloves garlic, chopped finely
  • -5 green chillies, slit
  • -1 teaspoon red chilli powder
  • -½ teaspoon turmeric powder
  • -1 teaspoon coriander powder
  • -1 teaspoon salt
  • -1 cup water
  • For the paste
  • -⅓ cup fresh coconut
  • -10 cashews
  • -1 tsp Fennel Seeds
  • Garnish
  • -1 tbsp Coriander leaves, chopped finely
Instructions
  1. ) Take all the ingredients listed under “for the pressure cooker”/ Instant pot (Set to 20 minutes → Rice) and add them to the cooker. Cover the pan and cook on medium for 20 minutes (about 15 whistles). Remove from heat and wait for the pressure to release.
  2. ) In the meantime, grind coconut, cashews and fennel seeds with a cup of water. Grind to a smooth paste. Set aside.
  3. ) Once the pressure releases, open the pan and put it on simmer. Add in the paste and simmer for 10 minutes.
  4. Garnish with chopped coriander leaves.

MASALA

I usually remove the turkey skin and create deep cuts in the meat before marinating for this and that way the masala flavors get locked in. I marinate my turkey for an hour up to overnight.

I have seen people use food coloring to get Indian style orange hue drumsticks like tandoori style from restaurants however I don’t like using coloring in my recipes much, so I used only powdered kashmiri red chillies.

Ingredients
  • -½ cup Plain yogurt (try to use 2% fat at least)
  • 3 cloves Garlic, chopped finely
  • -1-inch Ginger, chopped finely
  • 1.5 tbsp Kashmiri chilli powder
  • 1 tbsp Lemon Juice
  • 1 tsp Black Pepper powder
  • 1 tbsp Mint leaves, chopped finely
  • 1 tbsp Coriander leaves, chopped finely
  • 1 tbsp Cumin powder
  • 1 tbsp Kosher salt
  • -3 Turkey Drumsticks (750 grams)
  • --
  • To Garnish
  • 1 tsp Coriander leaves, chopped finely
Instructions
  1. Whisk together all ingredients except for turkey in a large bowl. Add turkey and rub the marinade all over to coat. Cover at room temperature and set aside from 1 to 2 hours.
  2. Preheat oven to 375ºF. Oil a wire cooling rack and place on top of baking sheet.
  3. Bake: Arrange turkey on rack and bake for about 25 minutes each side, or until juices run clear. Turn on broiler and broil until charred in spots. I broiled for two minutes each side. At this step watch it closely. ***Ensure internal temperature of the drumsticks has reached 165F.
  4. Garnish with coriander leaves and Serve it hot. ☺

These turkey meatballs are juicy, tender and cooked in a creamy sauce. We are all looking for protein intake in our daily meals and turkey is an excellent option to add to our daily protein rotation.

TEFTELI:

I recently came to know about Tefteli.  These are Russian style meatballs. The difference between these and classic l meatballs is that we mix boiled rice into the protein. I have made these with turkey I did this on a Monday evening which is the busiest day in a week for me. I had this with some mashed potatoes. Real comfort food. You can also have this withyour favourite veggies if you’d like!.

The meatballs are made and then boiled in the creamy sauce so every piece is coated with the cream sauce. You can always have the turkey meatballs by themselves. These are quick and easy to whip up.

I made this for the week because I wanted to enjoy it more than once!

THINK TURKEY:

Turkey is a versatile protein that can take on different flavors and be prepared in a lot of different ways – bake it, roast, grill, fry, slow cooker, pressure cook it, etc.

Also, when you eat Canadian turkey, you’re supporting Canadian turkey farmers. Having good food and supporting our communities makes all of us feel good.

COOKING TURKEY:

I have had questions on cooking turkey and when it is done. The best way is to use a meat thermometer inserted into the thickest part of the turkey, without touching the bone:

The whole turkey is cooked at 170F (77C)

Ground turkey (Burgers, cutlets, meatballs, sausages) at 165F

Cuts (thigh, wings, and breast legs) at 165F again.

Turkey Meatballs in a sauce (Tefteli)

Serves: 6 cups
 
Ingredients
  • Turkey Meatballs: (around 13 if 1 inch)
  • • Ground Turkey – 400 grams
  • • Cooked white rice – 120 grams (cool it to room temperature)
  • • Large egg – 1
  • • Onion (red/white) – ½ cup (finely chopped)
  • • Garlic – 2 cloves (finely chopped)
  • • Salt – ½ tsp
  • • Black Pepper powder – ¼ tsp
  • • Paprika – ¼ tsp
  • • Flour – ½ cup (to pat)
  • • Extra light Olive Oil – 2.5 tbsp
  • Sauce:
  • • Butter – 1 tbsp
  • • Flour – 1.5 tbsp
  • • Water – 2 cups (veg or poultry broth can be used too)
  • • Sour cream – ¼ cup (or plain greek yogurt)
  • • Paprika – ½ tsp
  • • Salt – ½ tsp
  • • Black Pepper powder – ½ tsp
  • • Basil – 1 tbsp (freshly chopped to garnish)
Instructions
  1. Turkey meatballs:
  2. In a bowl, combine ground turkey, rice, egg, finely chopped onion, finely chopped garlic, salt, pepper powder and paprika. Mix well. Roll the combined meat into 1 to 1 ½ inch balls (even-sized balls), pat/roll in the flour and set aside.
  3. Heat a large skillet on medium heat and add 2.5 tbsp of oil. Add the meatballs and cook each side for 7 mins until browned and cooked through. You can check using a thermometer (165F) as mentioned above in my notes. Remove the meatballs from the pan and set aside.
  4. Sauce:
  5. In the same skillet, add 1.5 tbsp of butter, then whisk in 2 tbsp of flour and continue whisking until golden in color. Whisk in 2 cups of water or broth and stir until it starts to thicken. Add sour cream with paprika, salt and pepper. Mix well.
  6. Add the turkey meatballs.
  7. Bring sauce to a simmer and stir until it thickens to coat the meatballs. Once the meatballs are warmed up, remove them from heat and garnish with chopped basil. (Remember that the sauce thickens more when it cools.)
